Ingredients

  • 8 oz (225 g) cream cheese, softened
  • ¼ cup (50 g) sugar
  • 1 large egg
  • ½ tsp vanilla extract
  • ½ cup (60 g) graham cracker crumbs (or digestive biscuits)
  • 2 tbsp melted butter
  • ¼ cup fresh blackberries, finely chopped
  • 1 cup breadcrumbs (panko for extra crunch)
  • 1 egg, beaten
  • ¼ cup flour
  • Oil for frying
  • 4 brioche or sesame seed buns
  • 8 slices crispy bacon
  • 1 cup fresh blackberries
  • Creamy sauce (options: poppy seed dressing, vanilla yogurt, or honey cream cheese spread)

Instructions

  1. Preheat oven to 325°F (163°C).
  2. In a bowl, beat cream cheese, sugar, egg, and vanilla until smooth.
  3. Stir in blackberry bits.
  4. In another bowl, mix crumbs with melted butter, then press into the bottom of ring molds (or muffin tins for minis).
  5. Pour cheesecake mixture on top and bake 18–20 minutes, until set.
  6. Cool completely, then chill for at least 2 hours.
  7. Carefully unmold chilled cheesecake rounds.
  8. Coat each patty lightly in flour, dip in beaten egg, then roll in breadcrumbs.
  9. Fry in hot oil (350°F / 175°C) for 2–3 minutes until golden and crisp. Drain on paper towels.
  10. Toast burger buns lightly.
  11. Spread creamy sauce on the bottom bun.
  12. Place cheesecake patty, then layer with crispy bacon.
  13. Add fresh blackberries for a juicy pop.
  14. Top with more sauce and the bun crown.
