Description

A hearty comfort-food casserole layered with cheesy pasta, seasoned ground beef, crispy bacon, and gooey melted cheese. Perfect for weeknight dinners or potlucks!


Ingredients

  • 12 oz rotini or fusilli pasta (uncooked)
  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Salt & pepper (to taste)
  • 1 cup cooked bacon (crumbled)
  • 2 cups shredded cheddar cheese (divided)
  • 1 cup mozzarella cheese
  • 1 can (10.5 oz) condensed cheddar cheese soup (or nacho cheese sauce)
  • 1 cup milk
  • ½ cup sour cream
  • 2 tbsp ketchup (optional, for that cheeseburger flavor)
  • 1 tbsp yellow mustard (optional)
  • 2 tbsp fresh parsley (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook pasta according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, heat olive oil. Add ground beef and cook until browned, breaking apart with a spoon. Stir in diced onion, garlic, paprika, onion powder, garlic powder, salt, and pepper. Cook until onion is softened.
  4. In a bowl, whisk together cheddar soup, milk, sour cream, ketchup, and mustard. Stir into the beef mixture until creamy.
  5. In a large casserole dish, combine pasta, beef mixture, half the bacon, 1 cup cheddar, and mozzarella. Mix well. Top with remaining cheddar and bacon.
  6. Bake uncovered for 20–25 minutes, until cheese is melted and bubbly. Garnish with parsley before serving.

  • Feel free to add more vegetables like bell peppers or mushrooms for extra flavor.
