Description
A delightful dessert recipe for a Banana Caramel Swiss Roll, featuring a light sponge cake filled with whipped cream and ripe bananas, topped with caramel sauce.

- 4 large eggs (room temperature)
- 3/4 cup (150g) granulated sugar
- 1 tsp vanilla extract
- 1 tbsp vegetable oil
- 1 cup (120g) all-purpose flour
- 1 tsp baking powder
- Pinch of salt
- 1 ½ cups (360 ml) heavy whipping cream, cold
- 1/4 cup (30g) powdered sugar
- 1 tsp vanilla extract
- 3–4 ripe bananas (not overripe)
- Caramel sauce (store-bought or homemade)
- Extra whipped cream
- Banana slices
Instructions
- Preheat oven to 350°F (180°C) and line a 10×15 inch (25x38cm) jelly roll pan with parchment paper.
- In a bowl, beat eggs and sugar for 5–7 minutes until very fluffy and pale. Add vanilla and oil, gently mix.
- In another bowl, whisk flour, baking powder, and salt. Sift the dry ingredients into the egg mixture and gently fold (do not deflate).
- Pour batter into the pan and spread evenly. Bake for 10–12 minutes — it should be soft and springy, not dry.
- Lay a clean kitchen towel on the counter & dust with powdered sugar. While hot, flip the cake onto the towel and peel the parchment. Roll the cake with the towel inside and let cool completely (30 minutes).
- Beat heavy cream, powdered sugar, and vanilla until stiff peaks form. Set aside.
- Carefully unroll the cooled cake and spread whipped cream evenly. Place whole peeled bananas in a row along one side and roll the cake back up around the bananas. Place seam-side down.
- Pipe whipped cream on top, add sliced bananas, and drizzle generously with caramel sauce. Refrigerate at least 1 hour before slicing for perfect shape.

- Ensure bananas are ripe but not overripe for the best flavor.
- Chilling the roll helps maintain its shape when slicing.
- Feel free to use homemade caramel sauce for a richer flavor.
