  • 3/4 cup (150g) granulated sugar
  • 1 tsp vanilla extract
  • 1 tbsp vegetable oil
  • 1 cup (120g) all-purpose flour
  • 1 tsp baking powder
  • Pinch of salt
  • 1 ½ cups (360 ml) heavy whipping cream, cold
  • 1/4 cup (30g) powdered sugar
  • 1 tsp vanilla extract
  • 34 ripe bananas (not overripe)
  • Caramel sauce (store-bought or homemade)
  • Extra whipped cream
  • Banana slices

Instructions

  1. Preheat oven to 350°F (180°C) and line a 10×15 inch (25x38cm) jelly roll pan with parchment paper.
  2. In a bowl, beat eggs and sugar for 5–7 minutes until very fluffy and pale. Add vanilla and oil, gently mix.
  3. In another bowl, whisk flour, baking powder, and salt. Sift the dry ingredients into the egg mixture and gently fold (do not deflate).
  4. Pour batter into the pan and spread evenly. Bake for 10–12 minutes — it should be soft and springy, not dry.
  5. Lay a clean kitchen towel on the counter & dust with powdered sugar. While hot, flip the cake onto the towel and peel the parchment. Roll the cake with the towel inside and let cool completely (30 minutes).
  6. Beat heavy cream, powdered sugar, and vanilla until stiff peaks form. Set aside.
  7. Carefully unroll the cooled cake and spread whipped cream evenly. Place whole peeled bananas in a row along one side and roll the cake back up around the bananas. Place seam-side down.
  8. Pipe whipped cream on top, add sliced bananas, and drizzle generously with caramel sauce. Refrigerate at least 1 hour before slicing for perfect shape.
