- 2 ¼ cups (280 g) all-purpose flour
- 2 tsp instant yeast
- 1 tsp sugar
- 1 tsp salt
- ¾ cup (180 ml) warm water
- 2 tbsp olive oil
- 1 cup cooked chicken breast, shredded or cubed
- ½ cup BBQ sauce (plus extra for drizzling)
- 1 ½ cups mozzarella cheese, shredded
- ¼ cup red onion, diced
- ¼ cup green bell pepper, diced
- ¼ cup red bell pepper, diced
- ½ tsp dried oregano
- ½ tsp black pepper
- Optional: A drizzle of honey BBQ or smoky sauce before serving
- Optional: Fresh parsley or chives for garnish
Instructions
- In a large bowl, mix warm water, sugar, and yeast. Let sit for 5 minutes until foamy.
- Add flour, salt, and olive oil. Mix until a dough forms.
- Knead for 5–7 minutes until smooth and elastic.
- Lightly oil a bowl, place the dough inside, cover, and let it rise for 1 hour or until doubled.
- Grease a 10-inch cast iron or deep pan generously with olive oil.
- Once the dough has risen, press it evenly into the pan, pushing to the edges.
- Let it rest for 10 minutes while you prepare the toppings.
- In a small bowl, mix chicken pieces with BBQ sauce until fully coated.
- Set aside while the oven preheats to 220°C (425°F).
- Spread 2–3 tbsp BBQ sauce over the dough as your base.
- Add half the mozzarella.
- Scatter the BBQ chicken evenly over the top.
- Add bell peppers, onions, and remaining cheese.
- Sprinkle oregano and pepper.
- Bake uncovered for 20–25 minutes, or until the crust is golden and cheese is bubbling and caramelized at the edges.
- Drizzle with extra BBQ sauce, sprinkle with parsley, and slice hot from the pan!

- For a spicier kick, add jalapeños to the toppings.
- Feel free to customize the veggies based on your preference.
