Ingredients

  • 2 ¼ cups (280 g) all-purpose flour
  • 2 tsp instant yeast
  • 1 tsp sugar
  • 1 tsp salt
  • ¾ cup (180 ml) warm water
  • 2 tbsp olive oil
  • 1 cup cooked chicken breast, shredded or cubed
  • ½ cup BBQ sauce (plus extra for drizzling)
  • 1 ½ cups mozzarella cheese, shredded
  • ¼ cup red onion, diced
  • ¼ cup green bell pepper, diced
  • ¼ cup red bell pepper, diced
  • ½ tsp dried oregano
  • ½ tsp black pepper
  • Optional: A drizzle of honey BBQ or smoky sauce before serving
  • Optional: Fresh parsley or chives for garnish

Instructions

  1. In a large bowl, mix warm water, sugar, and yeast. Let sit for 5 minutes until foamy.
  2. Add flour, salt, and olive oil. Mix until a dough forms.
  3. Knead for 5–7 minutes until smooth and elastic.
  4. Lightly oil a bowl, place the dough inside, cover, and let it rise for 1 hour or until doubled.
  5. Grease a 10-inch cast iron or deep pan generously with olive oil.
  6. Once the dough has risen, press it evenly into the pan, pushing to the edges.
  7. Let it rest for 10 minutes while you prepare the toppings.
  8. In a small bowl, mix chicken pieces with BBQ sauce until fully coated.
  9. Set aside while the oven preheats to 220°C (425°F).
  10. Spread 2–3 tbsp BBQ sauce over the dough as your base.
  11. Add half the mozzarella.
  12. Scatter the BBQ chicken evenly over the top.
  13. Add bell peppers, onions, and remaining cheese.
  14. Sprinkle oregano and pepper.
  15. Bake uncovered for 20–25 minutes, or until the crust is golden and cheese is bubbling and caramelized at the edges.
  16. Drizzle with extra BBQ sauce, sprinkle with parsley, and slice hot from the pan!
