- 2 tsp baking powder

- 4 large eggs, room temperature
- 200 g (1 cup) granulated sugar
- 120 ml (½ cup) whole milk, warm

- 1 tsp vanilla extract
- 400 ml (1 ¾ cups) heavy whipping cream, chilled
- 250 g (1 cup) mascarpone or cream cheese
- 100 g (½ cup) powdered sugar
- 1 tsp vanilla extract
- 200 g (1 ½ cups) fresh blueberries
- 200 g (1 ½ cups) fresh raspberries
- 150 g (1 cup) raspberries (for glaze)
- 2 tbsp sugar (for glaze)
- 1 tsp lemon juice (for glaze)
- 80 g (½ cup) white chocolate, melted (for glaze)
- 2–3 tbsp heavy cream (for glaze)
- Fresh blueberries (for decoration)
- Fresh raspberries (for decoration)
- Dusting of powdered sugar (for decoration)
Instructions
- Preheat oven to 175°C (350°F). Grease and line three 8-inch round cake pans.
- In a bowl, sift together flour, baking powder, and salt.
- In a separate large bowl, beat eggs and sugar until pale and fluffy (about 5 minutes).
- Gently fold in the dry ingredients.
- Stir in warm milk, melted butter, and vanilla.
- Divide batter between pans and bake 20–25 minutes, until golden and springy. Cool completely.
- Whip heavy cream until soft peaks form.
- Add mascarpone/cream cheese, powdered sugar, and vanilla. Whip until smooth and fluffy.
- Fold in fresh blueberries and raspberries.
- Place first sponge layer on a cake board/plate.
- Spread a thick layer of berry cream evenly.
- Repeat with remaining sponges and cream filling.
- Smooth the sides gently to keep the layered look visible.
- Cook raspberries, sugar, and lemon juice until softened.
- Strain to remove seeds.
- Mix puree with melted white chocolate and heavy cream until smooth and glossy.
- Pour glaze over the top of the cake, letting it drip slightly over the edges.
- Arrange fresh blueberries and raspberries on top.
- Dust with powdered sugar for a frosted effect.
