Ingredients

  • 2 tsp baking powder
  • ½ tsp salt
  • 4 large eggs, room temperature
  • 200 g (1 cup) granulated sugar
  • 120 ml (½ cup) whole milk, warm
  • 80 g (6 tbsp) unsalted butter, melted
  • 1 tsp vanilla extract
  • 400 ml (1 ¾ cups) heavy whipping cream, chilled
  • 250 g (1 cup) mascarpone or cream cheese
  • 100 g (½ cup) powdered sugar
  • 1 tsp vanilla extract
  • 200 g (1 ½ cups) fresh blueberries
  • 200 g (1 ½ cups) fresh raspberries
  • 150 g (1 cup) raspberries (for glaze)
  • 2 tbsp sugar (for glaze)
  • 1 tsp lemon juice (for glaze)
  • 80 g (½ cup) white chocolate, melted (for glaze)
  • 23 tbsp heavy cream (for glaze)
  • Fresh blueberries (for decoration)
  • Fresh raspberries (for decoration)
  • Dusting of powdered sugar (for decoration)

Instructions

  1. Preheat oven to 175°C (350°F). Grease and line three 8-inch round cake pans.
  2. In a bowl, sift together flour, baking powder, and salt.
  3. In a separate large bowl, beat eggs and sugar until pale and fluffy (about 5 minutes).
  4. Gently fold in the dry ingredients.
  5. Stir in warm milk, melted butter, and vanilla.
  6. Divide batter between pans and bake 20–25 minutes, until golden and springy. Cool completely.
  7. Whip heavy cream until soft peaks form.
  8. Add mascarpone/cream cheese, powdered sugar, and vanilla. Whip until smooth and fluffy.
  9. Fold in fresh blueberries and raspberries.
  10. Place first sponge layer on a cake board/plate.
  11. Spread a thick layer of berry cream evenly.
  12. Repeat with remaining sponges and cream filling.
  13. Smooth the sides gently to keep the layered look visible.
  14. Cook raspberries, sugar, and lemon juice until softened.
  15. Strain to remove seeds.
  16. Mix puree with melted white chocolate and heavy cream until smooth and glossy.
  17. Pour glaze over the top of the cake, letting it drip slightly over the edges.
  18. Arrange fresh blueberries and raspberries on top.
  19. Dust with powdered sugar for a frosted effect.
