Instructions
- In a chilled bowl, whip the heavy cream until soft peaks form.
- In another bowl, beat mascarpone (or cream cheese), powdered sugar, vanilla, and melted Biscoff spread until smooth.
- Fold whipped cream into the Biscoff mixture until fluffy and combined.
- Slice croissants lengthwise, leaving one side intact (like a sandwich).
- Pipe or spoon the Biscoff cream filling generously inside.
- Drizzle melted Biscoff spread over the filled croissants.
- Sprinkle crushed Biscoff cookies on top.
- Garnish each croissant with a whole cookie for presentation.
