  • 1 cup blueberries
  • 2 tbsp sugar
  • 1 tbsp lemon juice
  • 1 tsp cornstarch + 1 tsp water (slurry)
  • For the French Toast
  • 8 thick slices brioche bread
  • 4 eggs
  • ¾ cup whole milk or heavy cream
  • 1 ½ tsp vanilla extract
  • 1 tbsp sugar
  • ½ tsp cinnamon
  • Pinch of salt
  • Butter, for cooking
  • To Serve
  • Maple syrup
  • Powdered sugar
  • Fresh blueberries

Instructions

  1. Make the Cheesecake Filling: Beat cream cheese, powdered sugar, and vanilla until smooth. Add heavy cream (or yogurt) and whip until thick and creamy. Set aside.
  2. Make the Blueberry Swirl: In a small saucepan, add blueberries, sugar, and lemon juice. Simmer 3–5 minutes until juicy. Stir in cornstarch slurry and cook until thickened. Cool slightly, then fold gently into half of the cheesecake filling to create a swirl (don’t overmix).
  3. Assemble the Stuffed Brioche: Spread a thick layer of plain cheesecake filling on one slice of brioche. Add a spoonful of blueberry swirl + a few fresh blueberries. Top with another slice of brioche to form a sandwich. Repeat for all portions.
  4. Make the Custard: Whisk eggs, milk/cream, vanilla, sugar, cinnamon, and salt in a shallow dish.
  5. Cook the French Toast: Heat butter in a skillet over medium heat. Dip each stuffed brioche sandwich into the custard for 3–4 seconds per side. Cook until golden brown and caramelized, about 3 minutes per side. Transfer to a plate and repeat.
  6. Serve: Stack while warm, dust with powdered sugar, add fresh blueberries, and pour over warm maple syrup.

Notes

  • For a lighter version, substitute Greek yogurt for heavy cream in the cheesecake filling.
  • Feel free to use frozen blueberries if fresh ones are not available.
