Ingredients

  • 100 g (½ cup) unsalted butter
  • 2 sprigs fresh thyme
  • 2 cloves garlic, crushed
  • Salt and black pepper, to taste
  • 1 sheet puff pastry, thawed if frozen
  • 1 egg, beaten (for egg wash)
  • 1 Tbsp grated Parmesan (optional, for a crisp top)
  • 1 Tbsp butter (for cheese sauce)
  • 1 Tbsp flour
  • 1 cup milk (whole or half-and-half)
  • 1 cup gruyère or mozzarella cheese, shredded
  • ¼ cup Parmesan, grated
  • Salt and a pinch of nutmeg (optional)
  • Flaky sea salt (for garnish)
  • Fresh parsley or chives, finely chopped (for garnish)

Instructions

  1. Preheat the oven to 200°C (400°F). Cut puff pastry into rectangles (about 10×15 cm / 4×6 in). Brush with egg wash and sprinkle lightly with Parmesan if desired. Bake for 15–18 minutes until golden, puffed, and crisp. Set aside to cool slightly.
  2. Season the steaks generously with salt and pepper. In a skillet, melt butter over medium-low heat with thyme and garlic. Add the steaks and baste continuously with the melted butter for 6–8 minutes (for medium-rare), turning once halfway through. Remove from heat and let rest for 5 minutes. Slice the steak thickly.
  3. In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute to make a roux. Gradually whisk in milk until smooth. Add cheeses, stir until melted and velvety. Season with salt and a pinch of nutmeg. Keep warm.
  4. Layer one puff pastry rectangle at the bottom. Add a few slices of steak and drizzle with cheese sauce. Repeat the layers — puff pastry, steak, sauce — until you form a “tower.” Finish with cheese sauce on top, a sprinkle of flaky sea salt, and chopped herbs.
