- 2 thick-cut filet mignons or ribeye steaks (about 200 g each)
- 100 g (½ cup) unsalted butter
- 2 sprigs fresh thyme
- 2 cloves garlic, crushed
- Salt and black pepper, to taste
- 1 sheet puff pastry, thawed if frozen
- 1 egg, beaten (for egg wash)
- 1 Tbsp grated Parmesan (optional, for a crisp top)
- 1 Tbsp butter (for cheese sauce)
- 1 Tbsp flour
- 1 cup milk (whole or half-and-half)
- 1 cup gruyère or mozzarella cheese, shredded
- ¼ cup Parmesan, grated
- Salt and a pinch of nutmeg (optional)
- Flaky sea salt (for garnish)
- Fresh parsley or chives, finely chopped (for garnish)
Instructions
- Preheat the oven to 200°C (400°F). Cut puff pastry into rectangles (about 10×15 cm / 4×6 in). Brush with egg wash and sprinkle lightly with Parmesan if desired. Bake for 15–18 minutes until golden, puffed, and crisp. Set aside to cool slightly.
- Season the steaks generously with salt and pepper. In a skillet, melt butter over medium-low heat with thyme and garlic. Add the steaks and baste continuously with the melted butter for 6–8 minutes (for medium-rare), turning once halfway through. Remove from heat and let rest for 5 minutes. Slice the steak thickly.
- In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute to make a roux. Gradually whisk in milk until smooth. Add cheeses, stir until melted and velvety. Season with salt and a pinch of nutmeg. Keep warm.
- Layer one puff pastry rectangle at the bottom. Add a few slices of steak and drizzle with cheese sauce. Repeat the layers — puff pastry, steak, sauce — until you form a “tower.” Finish with cheese sauce on top, a sprinkle of flaky sea salt, and chopped herbs.
