These Cajun Chicken Sloppy Joes are a quick, flavor-packed twist on the classic! For the Chicken Filling

  • 1 lb boneless chicken breast or thighs, diced

  • 1 tbsp olive oil

  • 1 tbsp Cajun seasoning

  • 1/2 tsp smoked paprika

  • 1/2 cup diced onion

  • 1/2 cup diced red bell pepper

  • 2 cloves garlic, minced

  • 1/2 cup tomato sauce (or crushed tomatoes)

  • 2 tbsp ketchup

  • 1 tbsp Worcestershire sauce

  • 1/4 cup chicken broth


Instructions

  • In a large skillet over medium heat, heat olive oil. Add diced chicken, Cajun seasoning, and smoked paprika. Cook for 5–6 minutes until chicken is lightly browned.

  • Stir in onion and bell pepper. Cook for 3–4 minutes until softened. Add minced garlic and cook for 1 minute until fragrant.

  • Pour in tomato sauce, ketchup, Worcestershire sauce, and chicken broth. Stir well, reduce heat, and simmer for 8–10 minutes until the sauce thickens and coats the chicken.

  • Pile the Cajun chicken mixture onto toasted brioche buns. Top with cheese or a drizzle of ranch/aioli if desired.

 

  • Serve warm with fries, chips, or a fresh salad.

Notes

  • For extra heat, add cayenne pepper or diced jalapeños.

  • Ground chicken or turkey can be swapped for diced chicken to save time.

  • Make ahead: The filling tastes even better the next day—store in the fridge for up to 3 days or freeze for up to 2 months.

 

  • Toasting the buns helps keep them from getting soggy and adds a nice crunch.
