  • Blue food coloring (gel)
  • ½ cup rainbow nonpareil sprinkles
  • 6 colorful paper straws or lollipop sticks
  • Optional: mini cherries, rainbow candies, or edible glitter

Instructions

  1. Prepare the Apples: Wash and dry apples thoroughly to remove wax (use hot water and a towel). Insert a straw or lollipop stick firmly into the top of each apple. Line a tray with parchment paper and lightly grease it with butter or oil.
  2. Make the Candy Coating: In a heavy-bottomed saucepan, combine sugar, corn syrup, water, and lemon juice. Heat over medium-high heat, swirling gently (don’t stir) until the mixture reaches 300°F (hard crack stage) on a candy thermometer. Remove from heat immediately and stir in yellow food coloring. Working quickly, dip each apple into the candy syrup, swirling to coat evenly. Let excess drip off and place on the prepared tray to harden.
  3. Add the Blue Drizzle: Melt the white candy melts with coconut oil in a microwave-safe bowl in 20-second intervals. Stir in blue food coloring until smooth. Drizzle over cooled candy apples using a spoon or piping bag. Immediately sprinkle with rainbow nonpareils before the drizzle sets.
  4. Decorate: Press mini cherries or rainbow candies on top for a fun carnival look. Let the apples sit at room temperature for 30–40 minutes until completely set.
