Ingredients

  • 1 package refrigerated pie crusts (2 crusts total)
  • 10 soft caramels, melted (or ¼ cup caramel sauce)
  • 1 egg (for egg wash)
  • 1 tbsp milk
  • 2 tbsp sugar (for topping)
  • ½ tsp cinnamon (for topping)

Instructions

  1. Prepare the apple filling: In a saucepan, melt butter over medium heat. Add apples, brown sugar, cinnamon, and salt, stirring until apples soften (about 5–6 minutes). In a small bowl, mix cornstarch and water, then pour into the apple mixture. Cook until thick and syrupy (2–3 more minutes). Remove from heat and let cool completely.
  2. Assemble the cookies: Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper. Roll out one pie crust and cut into rounds (about 2½–3 inches) using a cookie cutter. Spoon a small amount of caramel and apple filling into the center of each round. Roll out the second pie crust and cut it into thin lattice strips (or use as a solid top if preferred). Cover each cookie with lattice or full top and press edges with a fork to seal.
  3. Brush and bake: Mix egg and milk to make egg wash. Brush the tops of cookies with egg wash. Combine sugar and cinnamon; sprinkle over cookies. Bake for 18–20 minutes, until golden brown and bubbling.
  4. Serve: Drizzle with extra caramel sauce while still warm. Serve with vanilla ice cream or enjoy as-is!
