  • 3 medium apples (Granny Smith or Honeycrisp), peeled & diced
  • 2 tbsp butter
  • ½ cup brown sugar
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • 1 tbsp cornstarch + 2 tbsp water (slurry, for thickening)
  • ¼ cup caramel sauce
  • 2 cups whipped cream (stabilized, or heavy cream + powdered sugar)
  • ½ cup caramel sauce (for drizzle)
  • 12 mini cookies (or crumble topping)

Instructions

  1. In a mixing bowl, whisk warm milk, yeast, and sugar. Let sit 5 min until foamy.
  2. Add eggs, butter, and salt. Mix in flour gradually until dough forms.
  3. Knead 8–10 min until smooth and elastic.
  4. Place dough in an oiled bowl, cover, and let rise 1–1.5 hrs until doubled.
  5. In a saucepan, melt butter and sauté apples for 3–4 min.
  6. Add brown sugar, cinnamon, and nutmeg. Stir and cook until apples soften.
  7. Mix in cornstarch slurry to thicken. Cook until glossy.
  8. Stir in caramel sauce. Let cool completely.
  9. Roll dough to ½-inch thickness, cut circles with a 3-inch cutter.
  10. Place on a tray, cover, and let rise 30 min.
  11. Heat oil to 350°F (175°C). Fry donuts in batches, 1–2 min per side until golden.
  12. Drain on paper towels, let cool slightly.
  13. Use a piping bag fitted with a round tip to fill donuts with caramel apple filling.
  14. Pipe whipped cream swirls on top.
  15. Drizzle with caramel sauce.
  16. Finish with a mini cookie or crumble topping.
