Description

A soft mocha sponge cake rolled around a silky vanilla cream filling, drizzled with luscious caramel sauce and topped with whipped cream and chocolate chunks. Elegant, indulgent, and surprisingly easy.


Ingredients

  • 4 large eggs, room temperature
  • ½ cup (100g) granulated sugar
  • 2 tbsp neutral oil (sunflower/canola)
  • ⅓ cup (40g) all-purpose flour
  • ¼ cup (25g) cocoa powder
  • 1 tsp instant coffee powder
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • Pinch of salt
  • 1 cup (240ml) heavy whipping cream, cold
  • 8 oz (225g) cream cheese, softened
  • ⅓ cup (40g) powdered sugar
  • 1 tsp vanilla extract
  • Caramel sauce (store-bought or homemade)
  • Whipped cream
  • Chocolate chunks or chopped chocolate bars

Instructions

  1. Preheat oven to 180°C / 350°F. Line a 10×15 inch (25x38cm) baking tray with parchment paper.
  2. In a bowl, beat eggs + sugar 5–7 minutes until pale, thick, and tripled in volume. Mix in oil + vanilla.
  3. Sift in flour, cocoa, coffee, baking powder, and salt. Fold gently to avoid deflating. Spread batter evenly onto the tray and bake 10–12 minutes.
  4. Remove from oven and immediately flip onto a clean kitchen towel dusted with powdered sugar. Peel off parchment. Roll the cake gently (with the towel) while still warm. Let cool completely.
  5. Beat cream cheese + powdered sugar + vanilla until smooth. Add cold heavy cream and whip to a thick, fluffy cream.
  6. Unroll the sponge gently. Spread cream filling all over. Roll back tightly into a log. Chill for 30–60 minutes.
  7. Pipe whipped cream swirls on top, drizzle with warm caramel, and add chocolate chunks.

  • Ensure the eggs are at room temperature for better volume.
  • Be gentle when folding in the dry ingredients to maintain the sponge’s light texture.
  • Chilling the roll helps it maintain its shape when slicing.
