Description
Deliciously crispy on the outside and creamy on the inside, these Caramel Pecan Fried Ice Cream Bites are a delightful treat that combines the rich flavors of caramel and pecans.
Ingredients

- 3 cups vanilla ice cream (or caramel swirl / butter pecan)
- 1 cup crushed cornflakes (very fine)
- ½ cup pecans, finely chopped
- 1 tsp ground cinnamon
- 2 TBSP granulated sugar
- 2 large eggs
- 1 TBSP milk
- Additional crushed cornflakes (for second coat)
- Vegetable oil, for frying
- Caramel sauce, warmed
- Chopped pecans
Instructions
- Scoop ice cream into tight round balls (about 2–3 TBSP each). Place on a parchment-lined tray and freeze 1 hour until very firm.
- In a bowl, mix crushed cornflakes, pecans, sugar, and cinnamon.
- Roll the frozen ice cream balls in the cornflake mixture, pressing gently so crumbs stick. Freeze again at least 1 hour.
- Whisk eggs and milk in a small bowl. Dip each ice cream ball into the egg wash, then into fresh crushed cornflakes. Freeze again, minimum 2 hours, or ideally overnight.
- Heat oil to 375°F (190°C). Fry one ball at a time for 8–12 seconds, turning gently. Remove quickly and place on a paper towel.
- Drizzle warm caramel sauce generously and sprinkle chopped pecans. Serve immediately.
Notes
- Ensure ice cream balls are rock solid before frying.
- For best results, freeze the coated ice cream balls overnight.
- Adjust frying time based on the size of the ice cream balls.
