Description

Deliciously crispy on the outside and creamy on the inside, these Caramel Pecan Fried Ice Cream Bites are a delightful treat that combines the rich flavors of caramel and pecans.


Ingredients

Scale
  • 3 cups vanilla ice cream (or caramel swirl / butter pecan)
  • 1 cup crushed cornflakes (very fine)
  • ½ cup pecans, finely chopped
  • 1 tsp ground cinnamon
  • 2 TBSP granulated sugar
  • 2 large eggs
  • 1 TBSP milk
  • Additional crushed cornflakes (for second coat)
  • Vegetable oil, for frying
  • Caramel sauce, warmed
  • Chopped pecans

Instructions

  1. Scoop ice cream into tight round balls (about 2–3 TBSP each). Place on a parchment-lined tray and freeze 1 hour until very firm.
  2. In a bowl, mix crushed cornflakes, pecans, sugar, and cinnamon.
  3. Roll the frozen ice cream balls in the cornflake mixture, pressing gently so crumbs stick. Freeze again at least 1 hour.
  4. Whisk eggs and milk in a small bowl. Dip each ice cream ball into the egg wash, then into fresh crushed cornflakes. Freeze again, minimum 2 hours, or ideally overnight.
  5. Heat oil to 375°F (190°C). Fry one ball at a time for 8–12 seconds, turning gently. Remove quickly and place on a paper towel.
  6. Drizzle warm caramel sauce generously and sprinkle chopped pecans. Serve immediately.

Notes

  • Ensure ice cream balls are rock solid before frying.
  • For best results, freeze the coated ice cream balls overnight.
