Ingredients

  • 100 g (7 tbsp) unsalted butter, melted
  • 2 tbsp granulated sugar
  • 680 g (24 oz) cream cheese, softened
  • 200 g (1 cup) granulated sugar
  • 3 large eggs, room temperature
  • 240 ml (1 cup) sour cream
  • 1 tsp vanilla extract
  • 1 tbsp cornstarch (optional, for stability)
  • 3 bananas, thickly sliced
  • 3 tbsp unsalted butter
  • 3 tbsp brown sugar
  • 1 tsp cinnamon
  • 120 ml (½ cup) heavy cream
  • 60 g (¼ cup) unsalted butter
  • 100 g (½ cup) brown sugar
  • 2 tbsp dark rum (or 1 tsp rum extract for non-alcoholic version)
  • Pinch of salt

Instructions

  1. Preheat oven to 160°C (325°F).
  2. Mix graham cracker crumbs, melted butter, and sugar.
  3. Press firmly into the bottom of a springform pan.
  4. Bake for 10 minutes, then set aside.
  5. In a large bowl, beat cream cheese until smooth.
  6. Add sugar, then eggs one at a time, mixing well.
  7. Stir in sour cream, vanilla, and cornstarch until combined.
  8. Pour mixture over crust.
  9. Place pan in a larger roasting pan filled with hot water halfway up the sides (water bath).
  10. Bake for 50–60 minutes, until edges are set but center is slightly jiggly.
  11. Turn off oven, crack door, and let cheesecake cool inside for 1 hour.
  12. Remove and refrigerate at least 4 hours or overnight.
  13. In a skillet, melt butter and brown sugar over medium heat.
  14. Add banana slices and cinnamon, cooking until golden and caramelized (2–3 minutes per side).
  15. Remove from heat.
  16. In a saucepan, combine cream, butter, brown sugar, and salt.
  17. Simmer for 3–4 minutes until slightly thickened.
  18. Stir in rum and cook 1 more minute.
  19. Top chilled cheesecake with caramelized bananas.
  20. Drizzle generously with warm rum glaze.
  21. Serve immediately for best texture.

  • For a non-alcoholic version, use rum extract instead of dark rum.
