A delightful dessert that combines the rich flavors of caramelized bananas with a creamy cheesecake, topped with a luscious rum glaze.

- 200 g (2 cups) graham cracker crumbs
- 100 g (7 tbsp) unsalted butter, melted
- 2 tbsp granulated sugar
- 680 g (24 oz) cream cheese, softened
- 200 g (1 cup) granulated sugar
- 3 large eggs, room temperature
- 240 ml (1 cup) sour cream
- 1 tsp vanilla extract
- 1 tbsp cornstarch (optional, for stability)
- 3 bananas, thickly sliced
- 3 tbsp unsalted butter
- 3 tbsp brown sugar
- 1 tsp cinnamon
- 120 ml (½ cup) heavy cream
- 60 g (¼ cup) unsalted butter
- 100 g (½ cup) brown sugar
- 2 tbsp dark rum (or 1 tsp rum extract for non-alcoholic version)
- Pinch of salt
Instructions
- Preheat oven to 160°C (325°F).
- Mix graham cracker crumbs, melted butter, and sugar.
- Press firmly into the bottom of a springform pan.
- Bake for 10 minutes, then set aside.
- In a large bowl, beat cream cheese until smooth.
- Add sugar, then eggs one at a time, mixing well.
- Stir in sour cream, vanilla, and cornstarch until combined.
- Pour mixture over crust.
- Place pan in a larger roasting pan filled with hot water halfway up the sides (water bath).
- Bake for 50–60 minutes, until edges are set but center is slightly jiggly.
- Turn off oven, crack door, and let cheesecake cool inside for 1 hour.
- Remove and refrigerate at least 4 hours or overnight.
- In a skillet, melt butter and brown sugar over medium heat.
- Add banana slices and cinnamon, cooking until golden and caramelized (2–3 minutes per side).
- Remove from heat.
- In a saucepan, combine cream, butter, brown sugar, and salt.
- Simmer for 3–4 minutes until slightly thickened.
- Stir in rum and cook 1 more minute.
- Top chilled cheesecake with caramelized bananas.
- Drizzle generously with warm rum glaze.
- Serve immediately for best texture.
Notes
- For a non-alcoholic version, use rum extract instead of dark rum.
- Ensure the cheesecake is fully cooled before adding the toppings.
- Can be made a day in advance for better flavor.
