Delicious Caramelized Pineapple Upside-Down Rolls that combine the sweetness of caramelized pineapple with soft, fluffy dough.

- ½ cup (1 stick) unsalted butter
- ¾ cup brown sugar, packed
- Pineapple slices (fresh or canned, patted dry)
- Maraschino cherries (optional, for the centers)
- 1 package refrigerated crescent roll dough or brioche rolls
- 4 oz cream cheese, softened (optional for filling)
- 2 tbsp sugar
- 1 tsp vanilla extract
- Fresh mint leaves (for garnish)
- Extra caramel sauce (for drizzling)
Instructions
- In a small saucepan, melt butter and brown sugar until bubbly and smooth.
- Divide evenly into the bottoms of muffin tins or ramekins.
- Place a pineapple slice on top of the caramel in each cavity (and a cherry in the center, if using).
- If using crescent dough: separate, then roll each with a little cream cheese + sugar filling for richness.
- If using brioche rolls: slice in half and spread with cream cheese mixture, then sandwich back together.
- Place dough/rolls on top of each pineapple slice in the muffin tin.
- Preheat oven to 350°F (175°C).
- Bake for 18–22 minutes, until rolls are golden and bubbly.
- Let cool for 5 minutes. Run a knife along the edges, then carefully invert onto a serving tray.
- Drizzle with extra caramel sauce and top each roll with a fresh mint sprig.
Notes
- Ensure pineapple slices are patted dry to avoid excess moisture.
- For a richer flavor, consider adding more cream cheese to the filling.
- These rolls are best served warm.
