Description

Cheeseburger Bacon Bombs are a delicious fusion of juicy meatballs wrapped in crispy bacon, filled with gooey cheese, and topped with even more cheese for an explosion of flavor.


Ingredients

  • lbs (680 g) ground beef (80/20 for juiciness)
  • ½ cup breadcrumbs
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 small onion, finely grated or minced
  • 2 tbsp fresh parsley (or 1 tsp dried)
  • 1 tsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp smoked paprika (optional)
  • 68 cheddar cheese cubes (¾ inch each, or mozzarella for extra gooeyness)
  • 68 slices bacon
  • ½ cup shredded cheddar OR cheese sauce
  • Fresh parsley or chives, chopped

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, egg, garlic, onion, parsley, Worcestershire, salt, pepper, and paprika. Mix gently until combined (don’t overmix or the meat will be tough).
  2. Divide mixture into 6–8 portions. Flatten each portion in your palm, place a cube of cheese in the center, and wrap meat around it to form a ball. Wrap each meatball with a slice of bacon, securing with a toothpick if necessary.
  3. Preheat oven to 400°F (200°C). Place bombs on a lined baking sheet or greased pan. Bake for 25–30 minutes, or until bacon is crispy and internal temp reaches 160°F (71°C). Alternatively, grill over medium heat, turning occasionally, until bacon is crisp and cheese is melty inside (about 20–25 minutes).
  4. Sprinkle shredded cheddar on top of hot bombs, or drizzle with warm cheese sauce. Garnish with parsley/chives.

  • For extra flavor, consider adding spices or herbs to the meat mixture.
  • These can be made ahead of time and frozen before cooking.
