- 2 tbsp shredded coconut (optional, for topping)
- Fresh mint leaves (for garnish)
Instructions
- Make the Cheesecake Filling: In a mixing bowl, beat cream cheese until smooth and fluffy. Add yogurt, powdered sugar, vanilla, and lemon zest. Beat until creamy and lump-free.
- Assemble the Parfait: In a large trifle bowl (or individual glasses), add a layer of granola/crushed graham crackers. Spread a thick layer of cheesecake filling over the base. Add a colorful fruit layer. Repeat layers until the bowl is full, finishing with fruits on top.
- Garnish: Sprinkle with shredded coconut and top with fresh mint. Chill for at least 1 hour before serving.
