Description

A fun twist on classic lasagna! Tender lasagna noodles are rolled up with a rich beef and ricotta filling, topped with marinara sauce, melted mozzarella, and baked until bubbling and cheesy.


Ingredients

  • 1 lb (450 g) ground beef
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese (plus extra for topping)
  • ½ cup grated Parmesan cheese
  • 1 large egg
  • 2 tbsp fresh parsley, chopped (or 1 tsp dried)
  • 1 tsp Italian seasoning
  • Salt & pepper, to taste
  • 12 lasagna noodles
  • 3 cups marinara sauce (homemade or store-bought)
  • 1½ cups shredded mozzarella (for topping)
  • Extra parsley, for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Cook lasagna noodles until al dente. Drain and lay flat on parchment paper or a baking sheet to prevent sticking.
  2. In a skillet over medium heat, cook ground beef and onion until browned. Add garlic and cook for 1 minute. Drain excess fat. In a mixing bowl, combine ricotta, mozzarella, Parmesan, egg, parsley, Italian seasoning, salt, pepper, and the cooked beef mixture. Stir well.
  3. Spread 1–2 tablespoons of filling evenly over each noodle. Roll noodles up tightly and place seam-side down in a greased 9×13-inch baking dish.
  4. Pour marinara sauce over the roll-ups. Sprinkle with mozzarella and Parmesan.
  5. Cover with foil and bake at 375°F (190°C) for 25 minutes. Remove foil and bake another 10–15 minutes until cheese is melted and bubbly.
  6. Garnish with fresh parsley. Serve hot with garlic bread or a side salad.

Notes

  • For a vegetarian option, substitute ground beef with sautéed vegetables or mushrooms.
  • Feel free to add more cheese for a cheesier flavor.
  • Leftovers can be stored in the refrigerator for up to 3 days.
