Delicious and cheesy Brazilian Pão de Queijo bites that are perfect for any occasion.
Ingredients

- 1½ cups (170 g) tapioca flour/starch
- 1 cup (100 g) finely grated Parmesan cheese
- ½ cup (60 g) shredded mozzarella cheese
- ⅔ cup (160 ml) milk
- ¼ cup (60 ml) vegetable oil (or mild olive oil)
- 1 large egg
- ½ tsp salt (adjust to taste)
Instructions
- Preheat oven to 400°F (200°C). Lightly grease or line a mini muffin tin.
- In a small saucepan, combine milk, oil, and salt. Heat over medium until steaming (just before boiling). Remove from heat.
- Place tapioca flour in a large mixing bowl. Pour the hot milk mixture over the flour and stir until a sticky dough forms.
- Let dough cool slightly, then mix in Parmesan and mozzarella.
- Add the egg and mix until smooth. Dough will be sticky and elastic.
- Scoop tablespoon-sized portions into the mini muffin tin.
- Bake for 15–20 minutes, until puffed and golden.
- Enjoy warm for the best texture.
