Description

Delicious and cheesy Brazilian Pão de Queijo bites that are perfect for any occasion.


Ingredients

Scale
  • 1½ cups (170 g) tapioca flour/starch
  • 1 cup (100 g) finely grated Parmesan cheese
  • ½ cup (60 g) shredded mozzarella cheese
  • ⅔ cup (160 ml) milk
  • ¼ cup (60 ml) vegetable oil (or mild olive oil)
  • 1 large egg
  • ½ tsp salt (adjust to taste)

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease or line a mini muffin tin.
  2. In a small saucepan, combine milk, oil, and salt. Heat over medium until steaming (just before boiling). Remove from heat.
  3. Place tapioca flour in a large mixing bowl. Pour the hot milk mixture over the flour and stir until a sticky dough forms.
  4. Let dough cool slightly, then mix in Parmesan and mozzarella.
  5. Add the egg and mix until smooth. Dough will be sticky and elastic.
  6. Scoop tablespoon-sized portions into the mini muffin tin.
  7. Bake for 15–20 minutes, until puffed and golden.
  8. Enjoy warm for the best texture.
