- 2 cups cooked chicken breast, shredded
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 teaspoon paprika
- ½ teaspoon garlic powder
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
- ½ cup shredded cheddar cheese
- 4 low-carb tortillas or lettuce wraps
- Fresh spinach or lettuce
- Sliced tomatoes
- Avocado slices
- Sour cream or Greek yogurt
- Chopped parsley
Instructions
- Cook the Chicken: Heat the olive oil in a skillet over medium heat. Add the chicken pieces and cook until they are no longer pink inside and cooked through. This usually takes about 7-10 minutes.
- Add the Flavor: Stir in the minced garlic (or garlic powder), Italian seasoning, salt, and pepper. Cook for another minute until fragrant.
- Melt the Cheese: Sprinkle the shredded cheese over the cooked chicken. Stir gently until the cheese is melted and gooey, coating the chicken beautifully.
- Warm the Tortillas: Briefly warm the tortillas. You can do this by placing them one at a time in a dry skillet for about 30 seconds per side, or wrapping them in a damp paper towel and microwaving for about 20-30 seconds. This makes them nice and pliable.
- Assemble the Wraps: Lay a warm tortilla flat. Spoon about a quarter of the cheesy chicken mixture down the center. Add any optional toppings like lettuce or tomatoes.
- Roll ‘Em Up! Fold in the sides of the tortilla, then roll it up snugly from the bottom.
