Description

A comforting and delicious Cheesy Meatball & Potato Bake that combines savory meatballs with tender potatoes and gooey cheese.


Ingredients

Scale
  • 500 g (1 lb) ground beef (or beef + pork mix)
  • 1 small onion, finely grated
  • 2 cloves garlic, minced
  • 1 egg
  • ½ cup breadcrumbs
  • 2 tbsp fresh parsley, chopped
  • 1 tsp paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • 56 medium potatoes, peeled and sliced into ½ cm rounds
  • 2 cups (500 ml) marinara or tomato sauce
  • 1 ½ cups (150 g) shredded mozzarella cheese
  • ½ cup (50 g) grated Parmesan cheese
  • 1 tbsp olive oil
  • Fresh parsley for garnish

Instructions

  1. In a large bowl, mix ground meat, onion, garlic, egg, breadcrumbs, parsley, paprika, salt, and pepper until combined.
  2. Roll into small meatballs (about the size of a golf ball).
  3. Preheat oven to 375°F (190°C).
  4. Grease a round or rectangular baking dish with olive oil.
  5. Layer the sliced potatoes evenly on the bottom. Season lightly with salt and pepper.
  6. Pour half of the tomato sauce over the potatoes.
  7. Place the raw meatballs on top of the potatoes.
  8. Pour the remaining sauce evenly over the meatballs.
  9. Cover with foil and bake for 35–40 minutes, until potatoes are tender and meatballs are cooked through.
  10. Remove foil, sprinkle mozzarella and Parmesan cheese generously on top.
  11. Bake uncovered for another 10–15 minutes, until cheese is bubbly and golden brown.
  12. Garnish with fresh parsley and serve hot with a side salad or crusty bread.

Notes

  • For a spicier kick, add red pepper flakes to the meatball mixture.
  • Feel free to substitute ground turkey or chicken for a lighter option.
  • Leftovers can be stored in the refrigerator for up to 3 days.
