Description

A fun and shareable dish made of mini taco wraps filled with seasoned beef, beans, and corn, baked with melted cheese, and served with guacamole. Perfect for game night or a party!


Ingredients

  • 500 g (1 lb) ground beef
  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or homemade mix)
  • 1 can (400 g) diced tomatoes
  • 1 can (400 g) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, canned, or frozen)
  • Salt & pepper to taste
  • 810 small flour tortillas
  • 2 cups shredded mozzarella (or Mexican cheese blend)
  • Fresh parsley or cilantro, chopped (for garnish)
  • Guacamole (for serving)
  • Sour cream (for serving)
  • Salsa (for serving)
  • Lime wedges (for serving)

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add onion and garlic, sauté until fragrant.
  3. Stir in ground beef and cook until browned.
  4. Mix in taco seasoning, diced tomatoes, beans, and corn.
  5. Simmer for 8–10 minutes until thickened.
  6. Preheat oven to 190°C (375°F).
  7. Lay tortillas flat and spoon filling onto one side of each.
  8. Roll them up tightly and cut in half to make mini wraps.
  9. Arrange the halves standing upright in a circular baking dish, cut side up.
  10. Sprinkle generously with shredded cheese.
  11. Bake for 15–20 minutes, until cheese is golden and bubbly.
  12. Garnish with parsley or cilantro.
  13. Place guacamole (or your favorite dip) in the center.
  14. Serve warm with extra salsa, sour cream, and lime wedges.
