Description
A fun and shareable dish made of mini taco wraps filled with seasoned beef, beans, and corn, baked with melted cheese, and served with guacamole. Perfect for game night or a party!
Ingredients

- 500 g (1 lb) ground beef
- 1 tbsp olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning (or homemade mix)
- 1 can (400 g) diced tomatoes
- 1 can (400 g) black beans, drained and rinsed
- 1 cup corn kernels (fresh, canned, or frozen)
- Salt & pepper to taste
- 8–10 small flour tortillas
- 2 cups shredded mozzarella (or Mexican cheese blend)
- Fresh parsley or cilantro, chopped (for garnish)
- Guacamole (for serving)
- Sour cream (for serving)
- Salsa (for serving)
- Lime wedges (for serving)
Instructions
- Heat olive oil in a skillet over medium heat.
- Add onion and garlic, sauté until fragrant.
- Stir in ground beef and cook until browned.
- Mix in taco seasoning, diced tomatoes, beans, and corn.
- Simmer for 8–10 minutes until thickened.
- Preheat oven to 190°C (375°F).
- Lay tortillas flat and spoon filling onto one side of each.
- Roll them up tightly and cut in half to make mini wraps.
- Arrange the halves standing upright in a circular baking dish, cut side up.
- Sprinkle generously with shredded cheese.
- Bake for 15–20 minutes, until cheese is golden and bubbly.
- Garnish with parsley or cilantro.
- Place guacamole (or your favorite dip) in the center.
- Serve warm with extra salsa, sour cream, and lime wedges.
Notes
- Feel free to customize the filling with your favorite ingredients.
- Can be made ahead of time and baked just before serving.
