Ingredients

  • 1 large round sourdough or crusty bread loaf
  • 1 stick (½ cup) unsalted butter, melted
  • 3 cloves garlic, minced
  • 2 tbsp fresh parsley, finely chopped (or 1 tbsp dried parsley)
  • 1 tsp Italian seasoning (optional)
  • 2 cups shredded mozzarella cheese
  • ½ cup shredded cheddar or Monterey Jack cheese (optional mix-in)
  • Pinch of salt and pepper

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Place the bread on a large piece of foil.
  3. Using a serrated knife, cut the bread in a crosshatch pattern (about 1-inch wide cubes), being careful not to slice all the way through the bottom.
  4. In a small bowl, mix melted butter, minced garlic, parsley, Italian seasoning, salt, and pepper.
  5. Gently pull apart the bread cubes and drizzle the garlic butter mixture between the cuts.
  6. Tuck shredded mozzarella (and cheddar, if using) into the cracks so the bread is stuffed with cheese throughout.
  7. Wrap the loaf loosely in foil and place on a baking sheet.
  8. Bake for 15 minutes, then open the foil and bake an additional 8–10 minutes, until cheese is melted and bubbly and the bread is golden.
  9. Sprinkle with extra parsley and serve warm.
