Delicious and cheesy pulled beef sliders perfect for any gathering.


Ingredients

  • 22.5 lbs (1–1.2 kg) chuck roast (or brisket)
  • 1 tbsp salt
  • 1 tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp olive oil
  • 1 cup (240ml) beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tbsp soy sauce
  • 1 tbsp brown sugar (optional, helps glaze)
  • 1 onion, sliced
  • 1 pack Hawaiian rolls (12-count)
  • 812 slices provolone, mozzarella, or Swiss
  • 2 tbsp butter (spread on base, optional)
  • 5 tbsp melted butter (for topping)
  • 2 cloves garlic, minced
  • 1 tbsp chopped parsley (fresh or dried)
  • ½ tsp Italian seasoning
  • Pinch salt

Instructions

  1. Cook the Beef (Slow Cooker or Instant Pot):
    • Slow Cooker: Rub beef with salt, pepper, paprika, garlic powder, onion powder. Sear all sides in a hot pan with olive oil. Place into slow cooker with onion, broth, Worcestershire, soy sauce, brown sugar. Cover and cook LOW 7–8 hours or HIGH 4–5 hours. Shred with forks.
    • Instant Pot / Pressure Cooker: Sear seasoned beef → Add liquids & onions → Pressure cook 60–70 min → Natural release → Shred.
  2. Assemble the Sliders: Preheat oven to 350°F (175°C). Slice Hawaiian rolls horizontally (keep as a sheet). Spread a little butter on the bottom layer (optional but delicious). Add a layer of cheese → top with shredded beef → top with more cheese. Place top buns back on.
  3. Add the Butter Topping & Bake: Mix: melted butter + garlic + parsley + Italian seasoning + pinch of salt. Brush generously over the rolls. Bake 15–20 minutes until cheese is melty and the tops are golden.

Notes

  • For a spicier kick, add some hot sauce to the beef mixture.
  • These sliders can be made ahead of time and reheated in the oven.
