Ingredients

  • 2 lb baby gold potatoes, halved (quarters if large)
  • 1214 oz smoked sausage or kielbasa, sliced into ½-inch coins
  • 2 tbsp olive oil (plus a little for the pan)
  • 1 (1 oz) packet ranch seasoning
  • 2 cups shredded cheddar cheese (or cheddar blend)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Lightly grease a large baking dish or sheet pan with a little olive oil.
  3. In a large bowl, combine halved potatoes, 2 tbsp olive oil, and ranch seasoning. Toss until evenly coated.
  4. Spread potatoes evenly in the prepared baking dish.
  5. Bake for 20 minutes.
  6. After 20 minutes, stir the potatoes and add sliced smoked sausage to the pan.
  7. Return to oven for another 15–20 minutes, or until potatoes are fork-tender and lightly golden.
  8. Sprinkle shredded cheese evenly over the potatoes and sausage.
  9. Return to oven for 5 minutes, or until cheese is melted and bubbly.
  10. Garnish with fresh parsley if desired.
  11. Serve warm as a main dish or hearty side.
