A delicious and easy-to-make dish featuring cheesy ranch potatoes and smoked sausage, perfect for dinner.

- 2 lb baby gold potatoes, halved (quarters if large)
- 12–14 oz smoked sausage or kielbasa, sliced into ½-inch coins
- 2 tbsp olive oil (plus a little for the pan)
- 1 (1 oz) packet ranch seasoning
- 2 cups shredded cheddar cheese (or cheddar blend)
- Fresh parsley for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Lightly grease a large baking dish or sheet pan with a little olive oil.
- In a large bowl, combine halved potatoes, 2 tbsp olive oil, and ranch seasoning. Toss until evenly coated.
- Spread potatoes evenly in the prepared baking dish.
- Bake for 20 minutes.
- After 20 minutes, stir the potatoes and add sliced smoked sausage to the pan.
- Return to oven for another 15–20 minutes, or until potatoes are fork-tender and lightly golden.
- Sprinkle shredded cheese evenly over the potatoes and sausage.
- Return to oven for 5 minutes, or until cheese is melted and bubbly.
- Garnish with fresh parsley if desired.
- Serve warm as a main dish or hearty side.
Notes
- For a spicier version, consider using a spicy smoked sausage.
- Feel free to add other vegetables like bell peppers or onions for extra flavor.
