Description
A delicious and comforting Cheesy Reuben Bake that combines corned beef, sauerkraut, and Swiss cheese wrapped in flaky pastry.
Ingredients
Scale
- 1 sheet puff pastry (thawed) or crescent roll dough
- 1 lb sliced corned beef (or pastrami)
- 1 ½ cups sauerkraut (drained and patted dry)
- 2 cups shredded Swiss cheese (or sliced Swiss)
- ½ cup Thousand Island dressing (plus more for dipping)
- 1 egg (beaten, for egg wash)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Roll out puff pastry into a rectangle.
- Spread Thousand Island dressing evenly over the pastry, leaving a 1-inch border.
- Layer corned beef slices, sauerkraut, and cheese on top.
- Fold pastry over filling (like a loaf or braid the top if you want a fancy look).
- Pinch edges to seal. Brush top with beaten egg.
- Bake for 25–30 minutes until golden brown and puffed.
- Let rest for 5–10 minutes before slicing.
- Slice into thick pieces. Garnish with fresh parsley.
- Serve with extra Thousand Island dressing for dipping.
Notes
- Ensure sauerkraut is well-drained to avoid a soggy pastry.
- Feel free to use pastrami instead of corned beef for a different flavor.
- This dish can be made ahead of time and baked just before serving.
