Delicious and cheesy meatloaf bites that are perfect for any occasion.
Ingredients

- 1 lb (450 g) ground beef (or mix beef & pork)
- ½ cup breadcrumbs (panko or regular)
- ¼ cup milk
- 1 large egg
- ½ cup onion, finely diced
- 2 cloves garlic, minced
- 2 tbsp fresh parsley, chopped (or 1 tsp dried)
- 1 tsp Italian seasoning
- ½ tsp salt
- ½ tsp black pepper
- 1 cup shredded mozzarella or cheddar cheese (for stuffing)
- ½ cup ketchup (or BBQ sauce for a smoky twist)
- 1 cup shredded cheddar & mozzarella blend
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C). Grease or line a 12-cup muffin tin.
- In a bowl, combine breadcrumbs and milk. Let soak for 2 minutes.
- Add ground beef, egg, onion, garlic, parsley, seasoning, salt, and pepper. Mix gently until combined (don’t overwork).
- Scoop about 2 tablespoons of mixture into each muffin cup.
- Press the center with your thumb to create a small well.
- Add 1 tablespoon of shredded cheese into the center.
- Cover with another spoonful of meat mixture, sealing the cheese inside.
- Spoon about 1 teaspoon of ketchup (or BBQ sauce) over each bite.
- Bake for 18–22 minutes, until cooked through.
- Remove from oven, sprinkle with shredded cheese blend, and return to oven for 3–4 minutes until melted.
- Let rest for 5 minutes.
- Garnish with fresh parsley and serve warm.
Notes
- For a smoky flavor, use BBQ sauce instead of ketchup.
- Feel free to mix different types of cheese for stuffing.
- These bites can be made ahead and reheated before serving.
