Description

Delicious and cheesy meatloaf bites that are perfect for any occasion.


Ingredients

Scale
  • 1 lb (450 g) ground beef (or mix beef & pork)
  • ½ cup breadcrumbs (panko or regular)
  • ¼ cup milk
  • 1 large egg
  • ½ cup onion, finely diced
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped (or 1 tsp dried)
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup shredded mozzarella or cheddar cheese (for stuffing)
  • ½ cup ketchup (or BBQ sauce for a smoky twist)
  • 1 cup shredded cheddar & mozzarella blend
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Grease or line a 12-cup muffin tin.
  2. In a bowl, combine breadcrumbs and milk. Let soak for 2 minutes.
  3. Add ground beef, egg, onion, garlic, parsley, seasoning, salt, and pepper. Mix gently until combined (don’t overwork).
  4. Scoop about 2 tablespoons of mixture into each muffin cup.
  5. Press the center with your thumb to create a small well.
  6. Add 1 tablespoon of shredded cheese into the center.
  7. Cover with another spoonful of meat mixture, sealing the cheese inside.
  8. Spoon about 1 teaspoon of ketchup (or BBQ sauce) over each bite.
  9. Bake for 18–22 minutes, until cooked through.
  10. Remove from oven, sprinkle with shredded cheese blend, and return to oven for 3–4 minutes until melted.
  11. Let rest for 5 minutes.
  12. Garnish with fresh parsley and serve warm.

Notes

  • For a smoky flavor, use BBQ sauce instead of ketchup.
  • Feel free to mix different types of cheese for stuffing.
  • These bites can be made ahead and reheated before serving.
