Ingredients

  • Ground beef – 1 lb (450 g)
  • Taco seasoning – 1 packet (or homemade blend)
  • Shredded cheddar cheese – 2 cups
  • Cornbread mix – 1 (8.5 oz) box, prepared
  • Olive oil – 1 tbsp
  • Onion – ½ cup, diced
  • Tomato – 1 cup, diced
  • Lettuce – 1 cup, shredded
  • Black olives – ½ cup, sliced
  • Jalapeño slices – ¼ cup (optional)
  • Sour cream – ½ cup
  • Green onions – ¼ cup, chopped

Instructions

  1. Mix cornbread batter according to package directions.
  2. Pour into a greased 9×13 baking dish and bake until lightly golden (about 15 minutes).
  3. Heat olive oil in a skillet. Sauté onion until soft.
  4. Add ground beef and cook until browned. Drain fat.
  5. Stir in taco seasoning and a splash of water; simmer 2–3 minutes.
  6. Spread seasoned beef evenly over the baked cornbread base.
  7. Sprinkle shredded cheddar generously over the top.
  8. Return casserole to oven at 350°F (175°C) for 15–20 minutes, until cheese is melted and bubbly.
