Description

Ingredients
- Ground beef – 1 lb (450 g)
- Taco seasoning – 1 packet (or homemade blend)
- Shredded cheddar cheese – 2 cups
- Cornbread mix – 1 (8.5 oz) box, prepared
- Olive oil – 1 tbsp
- Onion – ½ cup, diced
- Tomato – 1 cup, diced
- Lettuce – 1 cup, shredded
- Black olives – ½ cup, sliced
- Jalapeño slices – ¼ cup (optional)
- Sour cream – ½ cup
- Green onions – ¼ cup, chopped
Instructions
- Mix cornbread batter according to package directions.
- Pour into a greased 9×13 baking dish and bake until lightly golden (about 15 minutes).
- Heat olive oil in a skillet. Sauté onion until soft.
- Add ground beef and cook until browned. Drain fat.
- Stir in taco seasoning and a splash of water; simmer 2–3 minutes.
- Spread seasoned beef evenly over the baked cornbread base.
- Sprinkle shredded cheddar generously over the top.
- Return casserole to oven at 350°F (175°C) for 15–20 minutes, until cheese is melted and bubbly.
- Remove from oven, let cool slightly, then spread sour cream.
- Add shredded lettuce, diced tomato, black olives, jalapeños, and green onions.
- Slice into squares and serve warm — like tacos in casserole form!

- For a spicier version, add more jalapeños or hot sauce.
