Description
A stacked tortilla pie layered with spiced ground beef, veggies, and gooey melted cheese. A Tex-Mex style dish that’s hearty, cheesy, and perfect for sharing.

- 500 g (1 lb) ground beef
- 1 tbsp olive oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 red bell pepper, diced
- 1 packet (30 g) taco seasoning (or homemade mix)
- 1 can (400 g / 14 oz) crushed tomatoes
- Salt & pepper, to taste
- 6–8 large flour tortillas
- 3 cups shredded mozzarella (or a mix of cheddar & Monterey Jack)
- 1 cup sour cream (optional, for creamier layers)
- Extra cheese for the top layer
- Fresh parsley or cilantro, chopped (optional)
Instructions
- Make the Meat Filling: Heat oil in a skillet, sauté onion and garlic until softened. Add ground beef and cook until browned. Stir in bell pepper and taco seasoning, cook 2 minutes. Pour in crushed tomatoes and simmer 10 minutes. Season to taste.
- Assemble the Tortilla Pie: Preheat oven to 375°F (190°C). Grease a springform or round baking pan. Place one tortilla at the bottom of the pan. Spread a layer of beef mixture, sprinkle cheese, and add a spoon of sour cream (optional). Repeat layers: tortilla → beef → cheese → sour cream, until all used. Finish with a tortilla topped with a thick layer of cheese.
- Bake: Bake uncovered for 20–25 minutes until cheese is golden and bubbly. Let rest 5 minutes before slicing into wedges.
Notes
- For a spicier version, add jalapeños to the meat filling.
- Can be made ahead and stored in the refrigerator before baking.
- Serve with a side salad for a complete meal.
