  • 16 oz (450g) cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream, cold (whipped to stiff peaks)
  • 1 can (20–22 oz / about 600g) cherry pie filling or homemade cherry compote
  • 1 cup heavy whipping cream, cold
  • 3 TBSP powdered sugar
  • 1 tsp vanilla
  • Fresh cherries (for decoration)
  • Extra whipped cream swirls (for decoration)
  • Light dusting of powdered sugar (for decoration)

Instructions

  1. Make the Crust: Combine graham crumbs, butter, and sugar. Press firmly into the bottom of a 9-inch springform pan. Chill in fridge while preparing filling.
  2. Cheesecake Layer: Beat cream cheese until smooth and fluffy. Add powdered sugar and vanilla. In a separate bowl, whip heavy cream to stiff peaks. Fold whipped cream into cream cheese mixture until silky. Spread half of this cheesecake mixture over the crust.
  3. Add the Cherry Ribbon Layer: Spoon half the cherry pie filling over the cheesecake layer (try to keep it even). Spread the remaining cheesecake mixture on top. Finish by spooning the remaining cherry filling over the top layer — this creates that stripe effect when sliced.
  4. Whipped Top Layer: Whip heavy cream, sugar, and vanilla to stiff peaks. Pipe or spread generously over the top.
  5. Decorate & Chill: Top with cherries and extra whipped cream swirls. Chill at least 4 hours, or overnight for perfect slices.
