A delicious and easy garlic butter chicken recipe that is perfect for a weeknight dinner.

- 1 lbs boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 1 tsp salt
- 1/2 tsp freshly ground black pepper
- 1 tsp smoked paprika
- 1/2 tsp onion powder
- 1/2 tsp dried oregano (optional)
- 2 tbsp olive oil
- 4 tbsp unsalted butter
- 5 cloves garlic, minced
- 1 tbsp fresh lemon juice (optional)
- 1 tbsp chopped fresh parsley or chives
Instructions
- Place the cubed chicken in a bowl and season with salt, black pepper, smoked paprika, onion powder, and oregano. Mix well and let it sit for 5–10 minutes.
- Heat olive oil in a large skillet over medium-high heat. Add chicken in a single layer. Cook undisturbed for 2–3 minutes, then flip and cook another 4–5 minutes until browned and cooked through.
- Reduce heat to medium-low. Move the chicken to one side of the pan and melt butter on the other. Add garlic and cook for 30 seconds until fragrant.
- Mix chicken with garlic butter, stir in lemon juice (if using), and garnish with parsley or chives. Serve hot.
Notes
- For extra flavor, marinate the chicken for a couple of hours before cooking.
- Serve with rice or pasta for a complete meal.
