Description

Ingredients

  • 2 sheets puff pastry (store-bought, thawed if frozen)
  • 1 egg (for egg wash)
  • 1 tbsp milk
  • Pinch of salt
  • 250 g dark or milk chocolate (or mix both)
  • 200 ml heavy cream
  • 1 tbsp butter
  • 1 tsp vanilla extract
  • Pinch of salt
  • 150 g granulated sugar
  • 50 ml water
  • 40 g butter
  • 60 ml heavy cream
  • Pinch of sea salt (for topping)

Instructions

  1. Preheat oven to 200°C (400°F) and line a baking tray with parchment paper.
  2. Cut each puff pastry sheet into 9 equal squares (3×3 grid) and place them slightly apart on the tray.
  3. Whisk together the egg, milk, and a pinch of salt, then brush lightly over the top for shine.
  4. Bake for 18–20 minutes, or until puffed and golden, then let cool completely on a wire rack.
  5. Heat the heavy cream in a saucepan over medium heat until just simmering, then pour over the chopped chocolate and let sit for 1 minute before stirring until smooth.
  6. Add butter, vanilla, and a pinch of salt to the chocolate mixture and mix well. Chill for 30–45 minutes, then whip slightly if desired.
  7. In a saucepan, heat sugar and water on medium heat until it turns amber, then remove from heat and whisk in butter.
  8. Slowly pour in cream while stirring until the mixture bubbles, then add a pinch of sea salt and let cool slightly until thick but pourable.
  9. Slice one baked puff pastry sheet horizontally, spread or pipe chocolate filling over the bottom layer, and place the top layer gently on top.
  10. Brush or drizzle the caramel glaze over the top and add small dollops of extra chocolate cream on each square, sprinkling lightly with sea salt flakes for contrast.
