  • ½ cup heavy cream (for filling)
  • 2 tbsp powdered sugar (for filling)
  • 2 tbsp cocoa powder (for filling)
  • ½ cup chopped cherries (for filling)
  • Whipped cream (for topping)
  • Chocolate syrup (for topping)
  • Fresh or maraschino cherries (for topping)
  • Extra chocolate chips (for topping)

Instructions

  1. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  2. In another bowl, whisk together buttermilk, egg, melted butter, and vanilla.
  3. Pour wet ingredients into the dry mixture. Stir gently until just combined (batter should be slightly lumpy).
  4. Fold in chopped cherries and mini chocolate chips.
  5. Heat a nonstick skillet or griddle over medium heat. Grease lightly with butter.
  6. Pour ¼ cup batter for each pancake and cook until bubbles form on top (about 2 minutes). Flip and cook for another 1–2 minutes until golden and cooked through.
  7. Whip heavy cream with powdered sugar and cocoa powder until soft peaks form.
  8. Gently fold in chopped cherries for the cream filling.
  9. Stack pancakes, spreading chocolate cherry cream between layers.
  10. Top with whipped cream, chocolate syrup, cherries, and chocolate chips.
