Instructions
- In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk together buttermilk, egg, melted butter, and vanilla.
- Pour wet ingredients into the dry mixture. Stir gently until just combined (batter should be slightly lumpy).
- Fold in chopped cherries and mini chocolate chips.
- Heat a nonstick skillet or griddle over medium heat. Grease lightly with butter.
- Pour ¼ cup batter for each pancake and cook until bubbles form on top (about 2 minutes). Flip and cook for another 1–2 minutes until golden and cooked through.
- Whip heavy cream with powdered sugar and cocoa powder until soft peaks form.
- Gently fold in chopped cherries for the cream filling.
- Stack pancakes, spreading chocolate cherry cream between layers.
- Top with whipped cream, chocolate syrup, cherries, and chocolate chips.
Notes
- For a richer chocolate flavor, add more cocoa powder to the pancake batter.
- Ensure cherries are well-drained if using maraschino cherries to avoid excess moisture in the batter.
