Description

Deliciously crunchy chocolate-covered chickpeas that are both sweet and savory.


Ingredients

  • 1 can (15 oz / 425 g) chickpeas, drained and rinsed
  • 1 tablespoon olive oil
  • 2 tablespoons maple syrup
  • 1/2 cup dairy-free chocolate chips
  • 1 tablespoon cocoa powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • Pinch of sea salt

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Spread the rinsed chickpeas on a clean towel and pat dry thoroughly to remove excess moisture.
  3. Transfer the chickpeas to a bowl and toss with olive oil and a pinch of sea salt. Spread them evenly on the prepared baking sheet.
  4. Roast for 25–30 minutes, shaking the pan halfway through, until chickpeas are golden and crunchy.
  5. While the chickpeas are roasting, melt the chocolate chips in a microwave-safe bowl or over a double boiler. Stir in the maple syrup, cocoa powder, vanilla extract, and cinnamon until smooth.
  6. Add the roasted chickpeas to the chocolate mixture and stir to coat evenly. Spread the coated chickpeas back onto the baking sheet to set before enjoying.
