Delicious soft and chewy chocolate chip cookies made with vanilla pudding for extra flavor and moisture.

- 1 cup (200g) unsalted butter (softened to room temperature)
- ½ cup (100g) light brown sugar (lightly packed)
- ½ cup (100g) granulated sugar
- 2 large eggs (at room temperature)
- 1 package (3 ounces) vanilla instant pudding mix (JELL-O brand or other)
- 1 teaspoon pure vanilla extract
- 2 ½ cups (300g) all-purpose flour
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 1 ½ cups (265g) chocolate chips
Instructions
- Preheat the oven to 350°F/180°C. Line a cookie sheet with parchment paper or silicone baking mat.
- In a large bowl, using a hand held mixer, beat the butter until creamy (30 seconds). Add sugar and beat until well combined (2 minutes).
- Add eggs, pudding mix, and vanilla extract, and beat until the eggs are well incorporated.
- In a separate bowl, combine the dry ingredients (flour, baking soda, and salt). Mix that with the wet ingredients until just combined.
- Fold in the chocolate chips.
- Using a small cookie scoop (1 tablespoon size), scoop out cookie balls onto a cookie sheet 2 inches apart.
- Bake in a preheated oven for 10-12 minutes until the bottom of the cookie is lightly browned.
- Allow the cookies to cool for 2 minutes on the baking sheet, then transfer to a wire rack to cool completely.
Notes
- Use room temperature ingredients for the best results.
- Do not overmix the dough after adding the dry ingredients.
- Cookies will continue to cook slightly on the baking sheet after removing from the oven.
- For chewier cookies, let the dough sit in the refrigerator for 30 minutes before baking.
- The type of chocolate chips can be substituted based on preference (dark, semi-sweet, etc).
