Description

Delicious soft and chewy chocolate chip cookies made with vanilla pudding for extra flavor and moisture.


Ingredients

  • 1 cup (200g) unsalted butter (softened to room temperature)
  • ½ cup (100g) light brown sugar (lightly packed)
  • ½ cup (100g) granulated sugar
  • 2 large eggs (at room temperature)
  • 1 package (3 ounces) vanilla instant pudding mix (JELL-O brand or other)
  • 1 teaspoon pure vanilla extract
  • 2 ½ cups (300g) all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 ½ cups (265g) chocolate chips

Instructions

  1. Preheat the oven to 350°F/180°C. Line a cookie sheet with parchment paper or silicone baking mat.
  2. In a large bowl, using a hand held mixer, beat the butter until creamy (30 seconds). Add sugar and beat until well combined (2 minutes).
  3. Add eggs, pudding mix, and vanilla extract, and beat until the eggs are well incorporated.
  4. In a separate bowl, combine the dry ingredients (flour, baking soda, and salt). Mix that with the wet ingredients until just combined.
  5. Fold in the chocolate chips.
  6. Using a small cookie scoop (1 tablespoon size), scoop out cookie balls onto a cookie sheet 2 inches apart.
  7. Bake in a preheated oven for 10-12 minutes until the bottom of the cookie is lightly browned.
  8. Allow the cookies to cool for 2 minutes on the baking sheet, then transfer to a wire rack to cool completely.

Notes

  • Use room temperature ingredients for the best results.
  • Do not overmix the dough after adding the dry ingredients.
  • Cookies will continue to cook slightly on the baking sheet after removing from the oven.
  • For chewier cookies, let the dough sit in the refrigerator for 30 minutes before baking.
  • The type of chocolate chips can be substituted based on preference (dark, semi-sweet, etc).
