Ingredients

  • ½ cup (100 g) brown sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • ¾ cup (95 g) all-purpose flour
  • ¼ cup (25 g) unsweetened cocoa powder
  • ¼ tsp salt
  • ½ cup (120 ml) heavy cream
  • 4 oz (115 g) dark chocolate, chopped
  • 1 tbsp butter (optional, for shine)
  • Fresh whole strawberries, washed and dried
  • Optional: crushed freeze-dried strawberries or chocolate flakes

Instructions

  1. Preheat oven to 175°C (350°F).
  2. Melt butter and chocolate together in a heatproof bowl over simmering water (or in the microwave in short bursts). Stir until smooth.
  3. Whisk in both sugars until glossy.
  4. Add eggs one by one, mixing after each addition, then add vanilla.
  5. Sift in flour, cocoa powder, and salt. Fold gently until combined.
  6. Pour into a parchment-lined square pan (8×8 inch / 20×20 cm).
  7. Bake for 25–30 minutes or until a toothpick inserted comes out with moist crumbs.
  8. Let cool completely before cutting into squares.
  9. Heat the heavy cream until just simmering.
  10. Pour over chopped chocolate, let sit for 1–2 minutes, then stir until silky and smooth.
  11. Add butter for extra gloss if desired.
  12. Spoon or drizzle ganache generously over each brownie square.
  13. Place one fresh strawberry on top of each.
  14. Finish with a final drizzle of chocolate ganache for that irresistible look.
  15. Chill 15–20 minutes to set.
