- 8 oz (225 g) dark or semi-sweet chocolate, chopped
- 1 cup (200 g) granulated sugar
- ½ cup (100 g) brown sugar
- 3 large eggs
- 1 tsp vanilla extract
- ¾ cup (95 g) all-purpose flour
- ¼ cup (25 g) unsweetened cocoa powder
- ¼ tsp salt
- ½ cup (120 ml) heavy cream
- 4 oz (115 g) dark chocolate, chopped
- 1 tbsp butter (optional, for shine)
- Fresh whole strawberries, washed and dried
- Optional: crushed freeze-dried strawberries or chocolate flakes
Instructions
- Preheat oven to 175°C (350°F).
- Melt butter and chocolate together in a heatproof bowl over simmering water (or in the microwave in short bursts). Stir until smooth.
- Whisk in both sugars until glossy.
- Add eggs one by one, mixing after each addition, then add vanilla.
- Sift in flour, cocoa powder, and salt. Fold gently until combined.
- Pour into a parchment-lined square pan (8×8 inch / 20×20 cm).
- Bake for 25–30 minutes or until a toothpick inserted comes out with moist crumbs.
- Let cool completely before cutting into squares.
- Heat the heavy cream until just simmering.
- Pour over chopped chocolate, let sit for 1–2 minutes, then stir until silky and smooth.
- Add butter for extra gloss if desired.
- Spoon or drizzle ganache generously over each brownie square.
- Place one fresh strawberry on top of each.
- Finish with a final drizzle of chocolate ganache for that irresistible look.
- Chill 15–20 minutes to set.
