Description
Chocolate Gingerbread Rice Krispie Pops are a festive treat combining the flavors of chocolate and gingerbread, perfect for holiday celebrations.
Ingredients

- 3 tbsp butter
- 1 bag (10 oz / 280 g) mini marshmallows
- ¼ cup cocoa powder
- ½ cup chocolate chips (optional for richer flavor)
- ½ tsp ground cinnamon
- ½ tsp ground ginger
- ¼ tsp nutmeg
- Pinch of cloves (optional)
- 6 cups Rice Krispies cereal
- Mini gingerbread men cookies (for decorating)
- Red & green M&M’s (for decorating)
- White chocolate or white candy melts (for drizzling)
- Paper straws or lollipop sticks
Instructions
- In a large pot, melt butter over medium heat. Add mini marshmallows and stir until fully melted. Mix in cocoa powder, chocolate chips, cinnamon, ginger, nutmeg, and cloves. Stir until smooth and chocolatey.
- Remove pot from heat. Add Rice Krispies and mix quickly until the cereal is fully coated.
- Grease your hands lightly with butter or oil. Scoop the mixture and form tight balls (golf-ball sized). Insert a paper straw or lollipop stick into each one. Place on a lined tray.
- While still warm OR after cooling, melt white chocolate and drizzle over the top to create snowy designs. Add M&M’s while icing is wet, or press a mini gingerbread man cookie onto the top and surround with red/green M&M’s.
- Let pops cool and firm for 20–30 minutes.
Notes
- For a richer flavor, add chocolate chips.
- You can mix styles of decoration for a fun presentation.
