Delicious chocolate thumbprint cookies filled with a creamy vanilla filling, perfect for any occasion.
Ingredients

- 1½ cups (360 ml) milk
- 3 large egg yolks
- 2 tbsp (16 g) cornstarch
- ½ cup (100 g) sugar
- 1 tsp vanilla extract
- 2 tbsp unsalted butter
- 1 cup (225 g) unsalted butter, softened
- ¾ cup (150 g) granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1¾ cups (220 g) all-purpose flour
- ½ cup (45 g) unsweetened cocoa powder
- ¼ tsp salt
- ½ tsp baking powder
- Dark chocolate shavings (optional)
Instructions
- In a medium saucepan, whisk milk, egg yolks, cornstarch, and sugar until smooth.
- Heat over medium heat, whisking constantly, until the mixture thickens (about 3–5 minutes).
- Remove from heat, stir in vanilla extract and butter until smooth.
- Transfer to a bowl, cover with plastic wrap touching the surface, and refrigerate until cooled.
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream butter and sugar until light and fluffy.
- Beat in egg and vanilla extract.
- In another bowl, whisk together flour, cocoa powder, salt, and baking powder.
- Gradually add dry ingredients to the wet ingredients and mix until combined.
- Scoop out about 1 tablespoon of dough and roll into balls.
- Place on the baking sheet, spacing 2 inches apart.
- Press the center of each ball with your thumb or the back of a teaspoon to make an indent.
- Bake for 10–12 minutes, then remove from the oven and press the indent again if it has puffed up.
- Let cool completely.
- Spoon or pipe chilled vanilla cream into the center of each cookie.
- Top with dark chocolate shavings if desired.

- Ensure the cookies are completely cooled before filling them with cream.
- Store cookies in an airtight container in the refrigerator for up to a week.
