Description

Delicious chocolate thumbprint cookies filled with a creamy vanilla filling, perfect for any occasion.


Ingredients

  • 1½ cups (360 ml) milk
  • 3 large egg yolks
  • 2 tbsp (16 g) cornstarch
  • ½ cup (100 g) sugar
  • 1 tsp vanilla extract
  • 2 tbsp unsalted butter
  • 1 cup (225 g) unsalted butter, softened
  • ¾ cup (150 g) granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1¾ cups (220 g) all-purpose flour
  • ½ cup (45 g) unsweetened cocoa powder
  • ¼ tsp salt
  • ½ tsp baking powder
  • Dark chocolate shavings (optional)

Instructions

  1. In a medium saucepan, whisk milk, egg yolks, cornstarch, and sugar until smooth.
  2. Heat over medium heat, whisking constantly, until the mixture thickens (about 3–5 minutes).
  3. Remove from heat, stir in vanilla extract and butter until smooth.
  4. Transfer to a bowl, cover with plastic wrap touching the surface, and refrigerate until cooled.
  5. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  6. In a large bowl, cream butter and sugar until light and fluffy.
  7. Beat in egg and vanilla extract.
  8. In another bowl, whisk together flour, cocoa powder, salt, and baking powder.
  9. Gradually add dry ingredients to the wet ingredients and mix until combined.
  10. Scoop out about 1 tablespoon of dough and roll into balls.
  11. Place on the baking sheet, spacing 2 inches apart.
  12. Press the center of each ball with your thumb or the back of a teaspoon to make an indent.
  13. Bake for 10–12 minutes, then remove from the oven and press the indent again if it has puffed up.
  14. Let cool completely.
  15. Spoon or pipe chilled vanilla cream into the center of each cookie.
  16. Top with dark chocolate shavings if desired.
