Description

Bright, creamy, fruity, and ultra-festive dessert bars perfect for holiday parties.


Ingredients

Scale
  • 1 ¼ cups (160 g) all-purpose flour
  • 1 cup (200 g) sugar
  • 2 tbsp unsweetened cocoa powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 large egg
  • ½ cup (120 ml) vegetable oil
  • ½ cup (120 ml) buttermilk
  • 1 tsp vanilla extract
  • 1 tsp white vinegar
  • Red food coloring (gel preferred)
  • 225 g cream cheese, softened
  • ½ cup (60 g) powdered sugar
  • 1 cup (240 ml) heavy cream, whipped to stiff peaks
  • 1 tsp vanilla extract
  • 1 ½ cups (350 g) cherry pie filling or finely chopped maraschino cherries mixed with 2 tbsp syrup
  • 1 cup crumbled vanilla cake or store-bought sponge
  • 1 box (3.4 oz / 96 g) instant pistachio pudding mix or 225 g cream cheese, ½ cup powdered sugar, 1 cup whipped cream, ½ tsp peppermint extract, green food coloring
  • 2 cups (480 ml) heavy cream
  • ¼ cup (30 g) powdered sugar
  • 1 tsp vanilla extract
  • Mini marshmallows
  • Red & green candies (M&M style)
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a bowl, mix together the flour, sugar, cocoa powder, baking soda, and salt.
  3. Add the egg, vegetable oil, buttermilk, vanilla extract, white vinegar, and red food coloring. Mix until smooth.
  4. Pour the red velvet batter into the prepared baking dish and bake for 25-30 minutes. Let it cool completely.
  5. In another bowl, beat the cream cheese and powdered sugar until smooth. Fold in the whipped cream and vanilla extract.
  6. Spread the cream cheese layer over the cooled red velvet cake.
  7. Top with cherry pie filling or chopped maraschino cherries.
  8. If using, sprinkle the vanilla cake crumble over the cherry layer.
  9. Prepare the green pudding layer by mixing the pistachio pudding mix with cold milk or by preparing the mint cheesecake layer.
  10. Spread the green pudding layer over the cherry filling.
  11. In a separate bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form. Spread over the green layer.
  12. Garnish with mini marshmallows, red & green candies, and a dusting of powdered sugar.
  13. Chill in the refrigerator for at least 2 hours before serving.

Notes

  • For a more intense flavor, use gel food coloring.
  • Feel free to substitute the cherry filling with other fruit fillings.
  • Store leftovers in the refrigerator for up to 3 days.
