- 2 cups graham cracker crumbs (or crushed cinnamon cookies)
- ½ cup unsalted butter, melted
- 2 tbsp sugar
- ½ cup unsalted butter, melted
- ¾ cup brown sugar
- 1 tbsp ground cinnamon
- 2 tbsp all-purpose flour
- 24 oz (680 g) cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 cup sour cream
- 2 tsp vanilla extract
- Whipped cream, for garnish
- Ground cinnamon, for dusting
Instructions
- Preheat oven to 325°F (160°C).
- Mix graham cracker crumbs, melted butter, and sugar until combined.
- Press firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then set aside.
- In a bowl, mix melted butter, brown sugar, cinnamon, and flour until smooth. Set aside to use as the swirl filling.
- Beat cream cheese and sugar until smooth and creamy.
- Add eggs one at a time, mixing well after each.
- Mix in sour cream and vanilla extract until just combined.
- Pour half of the cheesecake batter over the crust.
- Spoon half of the cinnamon swirl mixture over the batter. Use a knife to gently swirl.
- Repeat with remaining cheesecake batter and cinnamon swirl. Swirl the top layer for a marbled effect.
- Place pan in a larger roasting pan and fill halfway with hot water (water bath method).
- Bake for 55–65 minutes, until edges are set but center is slightly jiggly.
- Turn off oven, crack door, and let cheesecake cool inside for 1 hour.
- Refrigerate at least 4 hours or overnight.
- Top with whipped cream swirls and a light dusting of cinnamon. Slice and enjoy!

- For best results, use room temperature cream cheese.
- Let the cheesecake cool completely before refrigerating.
- Can be made a day in advance for better flavor.
