Ingredients

  • 2 cups graham cracker crumbs (or crushed cinnamon cookies)
  • ½ cup unsalted butter, melted
  • 2 tbsp sugar
  • ½ cup unsalted butter, melted
  • ¾ cup brown sugar
  • 1 tbsp ground cinnamon
  • 2 tbsp all-purpose flour
  • 24 oz (680 g) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 2 tsp vanilla extract
  • Whipped cream, for garnish
  • Ground cinnamon, for dusting

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Mix graham cracker crumbs, melted butter, and sugar until combined.
  3. Press firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then set aside.
  4. In a bowl, mix melted butter, brown sugar, cinnamon, and flour until smooth. Set aside to use as the swirl filling.
  5. Beat cream cheese and sugar until smooth and creamy.
  6. Add eggs one at a time, mixing well after each.
  7. Mix in sour cream and vanilla extract until just combined.
  8. Pour half of the cheesecake batter over the crust.
  9. Spoon half of the cinnamon swirl mixture over the batter. Use a knife to gently swirl.
  10. Repeat with remaining cheesecake batter and cinnamon swirl. Swirl the top layer for a marbled effect.
  11. Place pan in a larger roasting pan and fill halfway with hot water (water bath method).
  12. Bake for 55–65 minutes, until edges are set but center is slightly jiggly.
  13. Turn off oven, crack door, and let cheesecake cool inside for 1 hour.
  14. Refrigerate at least 4 hours or overnight.
  15. Top with whipped cream swirls and a light dusting of cinnamon. Slice and enjoy!
