- 2 tbsp sugar
- 2 tsp baking powder
- ½ tsp baking soda

- 1 ¼ cups (300 ml) buttermilk (or milk + 1 tbsp vinegar)
- 1 large egg
- 3 tbsp melted butter
- 1 tsp vanilla extract
- 4 tbsp (60 g) butter, melted (for cinnamon swirl)
- ⅓ cup (70 g) brown sugar
- 1 tbsp cinnamon
- 1 tbsp flour (for cinnamon swirl)
- 4 oz (115 g) cream cheese, softened (for drizzle)
- 3 tbsp butter, melted (for drizzle)
- 1 cup (120 g) powdered sugar (for drizzle)
- 1 tsp vanilla (for drizzle)
- 2–3 tbsp warm milk (to thin drizzle)
Instructions
- In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, combine buttermilk, egg, melted butter, and vanilla.
- Pour wet ingredients into dry and mix gently until just combined. Batter should remain slightly lumpy for fluffier pancakes.
- Mix melted butter, brown sugar, cinnamon, and flour for the cinnamon swirl. Let rest 2 minutes until slightly thickened. Transfer to a piping bag or squeeze bottle.
- Heat a nonstick pan on medium-low and grease lightly. Pour about ¼ cup batter for each pancake.
- As the pancake begins to set (about 20–30 seconds), pipe a tight spiral of cinnamon filling from center outward.
- Cook until bubbles appear and edges set, about 1 minute. Flip gently and cook 30 seconds more — the swirl caramelizes into a sticky cinnamon ‘roll’ pattern.
- Repeat for remaining batter.
- Warm the cream cheese drizzle slightly if needed and drizzle generously over the stack. Dust with powdered sugar for the swirl effect in the photo.
