  • 3 tbsp butter, melted (for drizzle)
  • 1 cup (120 g) powdered sugar (for drizzle)
  • 1 tsp vanilla (for drizzle)
  • 23 tbsp warm milk (to thin drizzle)

Instructions

  1. In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, combine buttermilk, egg, melted butter, and vanilla.
  3. Pour wet ingredients into dry and mix gently until just combined. Batter should remain slightly lumpy for fluffier pancakes.
  4. Mix melted butter, brown sugar, cinnamon, and flour for the cinnamon swirl. Let rest 2 minutes until slightly thickened. Transfer to a piping bag or squeeze bottle.
  5. Heat a nonstick pan on medium-low and grease lightly. Pour about ¼ cup batter for each pancake.
  6. As the pancake begins to set (about 20–30 seconds), pipe a tight spiral of cinnamon filling from center outward.
  7. Cook until bubbles appear and edges set, about 1 minute. Flip gently and cook 30 seconds more — the swirl caramelizes into a sticky cinnamon ‘roll’ pattern.
  8. Repeat for remaining batter.
  9. Warm the cream cheese drizzle slightly if needed and drizzle generously over the stack. Dust with powdered sugar for the swirl effect in the photo.
