Description

A deliciously soft and caramelized Cinnamon–Sugar Pull-Apart Loaf that is perfect for sharing.


Ingredients

Scale
  • 3 cups (360 g) all-purpose flour
  • 1 packet (7 g) instant yeast
  • 1/4 cup (50 g) granulated sugar
  • 1/2 tsp fine salt
  • 3/4 cup (180 ml) warm milk
  • 2 large eggs (room temperature)
  • 1/4 cup (60 g) unsalted butter, softened
  • 1/2 cup (100 g) granulated sugar (for coating)
  • 1/3 cup (65 g) brown sugar (for coating)
  • 2 tsp cinnamon (for coating)
  • 1/2 cup (115 g) melted butter (for brushing)
  • Pearl sugar (optional)
  • A drizzle of honey or caramel (optional)

Instructions

  1. In a bowl, mix flour, instant yeast, sugar, and salt.
  2. Add warm milk and eggs. Mix until a shaggy dough forms.
  3. Add the softened butter and knead 8–10 minutes until smooth, soft, and elastic.
  4. Form a ball, cover, and let rise 1 hour or until doubled.
  5. In a small bowl, combine sugar, brown sugar, and cinnamon. Keep melted butter in a separate bowl.
  6. Punch down the dough and divide into 35–40 small balls (each ~20 g).
  7. Dip each dough ball in melted butter.
  8. Roll each ball in cinnamon-sugar to coat generously.
  9. Arrange the coated balls inside a greased loaf pan, stacking them to fill the pan.
  10. Cover the loaf pan and let the dough rise 30 minutes until puffy.
  11. Preheat oven to 180°C (350°F).
  12. Bake 30–35 minutes, until deep golden and caramelized. If browning too quickly, cover loosely with foil for the last 10 minutes.
  13. While still warm, sprinkle pearl sugar generously on top (just like in the photo).
  14. Let rest 10 minutes, then unmold if desired.
  15. Serve warm — the pieces should pull apart beautifully.
