- 1 pre-baked 9-inch pie crust (homemade or store-bought)
- 1 ½ to 2 lbs fresh strawberries (hulled, halved or whole depending on size)
- 1 cup granulated sugar
- 3 tbsp cornstarch
- 1 cup water
- 3 tbsp strawberry gelatin (or strawberry Jell-O powder)
- 1 tsp lemon juice (optional, for brightness)
- Fresh whipped cream or whipped topping
Instructions
- Prepare crust: Bake pie crust (if homemade or unbaked shell) until golden and fully cooked. Cool completely.
- Cook glaze: In a saucepan, whisk together sugar and cornstarch. Slowly add water while whisking to avoid lumps. Cook over medium heat until thickened and clear (about 5 minutes).
- Add flavor: Stir in strawberry gelatin and lemon juice. Remove from heat and let cool slightly.
- Assemble pie: Arrange fresh strawberries in cooled pie crust, pointed sides up for a pretty look. Pour glaze evenly over berries, making sure they’re coated.
- Chill: Refrigerate pie for at least 2 hours until set.
- Serve: Garnish with swirls of whipped cream before serving.

- For a gluten-free option, use a gluten-free pie crust.
