- 1 tablespoon lime juice
- Salt and pepper to taste
- 1 tablespoon honey (optional, for sweetness)
- 4 cod fillets (about 6 oz each)
- Fresh cilantro or parsley, chopped, for garnish (optional)
- Lime wedges, for serving (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine coconut milk, olive oil, and lime juice; stir to blend.
- Add curry powder, ground turmeric, ground ginger, chili powder, and minced garlic to the mixture; whisk until well incorporated.
- Season with salt, pepper, and honey (if using) and mix again.
- Pat the cod fillets dry and place them in a baking dish.
- Pour the coconut curry sauce over the cod fillets, ensuring they are well coated.
- Bake for 20-25 minutes or until the fish is opaque and flakes easily with a fork.
- Let it rest for a couple of minutes, then garnish with fresh cilantro or parsley, and serve with lime wedges.
