Description

This Coconut Curry Cod is a delicious dish featuring cod fillets baked in a rich coconut milk curry sauce.

  • 1 teaspoon ground turmeric

  • 1/2 teaspoon chili powder (optional for heat)
  • 2 garlic cloves, minced
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • 1 tablespoon honey (optional, for sweetness)
  • 4 cod fillets (about 6 oz each)
  • Fresh cilantro or parsley, chopped, for garnish (optional)
  • Lime wedges, for serving (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine coconut milk, olive oil, and lime juice; stir to blend.
  3. Add curry powder, ground turmeric, ground ginger, chili powder, and minced garlic to the mixture; whisk until well incorporated.
  4. Season with salt, pepper, and honey (if using) and mix again.
  5. Pat the cod fillets dry and place them in a baking dish.
  6. Pour the coconut curry sauce over the cod fillets, ensuring they are well coated.
  7. Bake for 20-25 minutes or until the fish is opaque and flakes easily with a fork.
  8. Let it rest for a couple of minutes, then garnish with fresh cilantro or parsley, and serve with lime wedges.
