- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup unsalted butter (softened)
- ¾ cup sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup buttermilk
- 1 cup shredded coconut (for coating)
- 8 oz cream cheese (softened)
- ½ cup heavy cream
- ½ cup powdered sugar
- 1 tsp vanilla extract
- ½ cup crushed cookies or graham crackers
- 2 tbsp butter (melted)
- ½ cup chocolate hazelnut spread (like Nutella) OR ½ cup melted milk chocolate
Instructions
- Preheat oven to 350°F (175°C). Grease and line a cupcake/muffin pan.
- In a bowl, whisk flour, baking powder, baking soda, and salt.
- In another bowl, cream butter and sugar until fluffy. Add eggs and vanilla.
- Mix dry ingredients alternately with buttermilk until smooth.
- Bake 15–18 minutes until golden. Cool completely.
- Roll cooled cakes in shredded coconut (you can brush lightly with syrup or glaze so coconut sticks).
- Beat cream cheese, powdered sugar, and vanilla until smooth.
- Whip in heavy cream until fluffy.
- Mix crushed cookies with melted butter until crumbly.
- Toast lightly in the oven (optional) for extra crunch.
- Slice coconut snowball cakes in half.
- On the bottom half, spread cookie crunch.
- Pipe or spoon cream filling over the crunch.
- Add a generous layer of chocolate spread.
- Cap with the top coconut cake.
- Drizzle with extra chocolate sauce and garnish with coconut flakes for a showstopper dessert.
