  • ½ cup buttermilk
  • 1 cup shredded coconut (for coating)
  • 8 oz cream cheese (softened)
  • ½ cup heavy cream
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • ½ cup crushed cookies or graham crackers
  • 2 tbsp butter (melted)
  • ½ cup chocolate hazelnut spread (like Nutella) OR ½ cup melted milk chocolate

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a cupcake/muffin pan.
  2. In a bowl, whisk flour, baking powder, baking soda, and salt.
  3. In another bowl, cream butter and sugar until fluffy. Add eggs and vanilla.
  4. Mix dry ingredients alternately with buttermilk until smooth.
  5. Bake 15–18 minutes until golden. Cool completely.
  6. Roll cooled cakes in shredded coconut (you can brush lightly with syrup or glaze so coconut sticks).
  7. Beat cream cheese, powdered sugar, and vanilla until smooth.
  8. Whip in heavy cream until fluffy.
  9. Mix crushed cookies with melted butter until crumbly.
  10. Toast lightly in the oven (optional) for extra crunch.
  11. Slice coconut snowball cakes in half.
  12. On the bottom half, spread cookie crunch.
  13. Pipe or spoon cream filling over the crunch.
  14. Add a generous layer of chocolate spread.
  15. Cap with the top coconut cake.
  16. Drizzle with extra chocolate sauce and garnish with coconut flakes for a showstopper dessert.
