  • 3 cups (360 g) powdered sugar
  • 23 tbsp heavy cream or milk
  • 1 tsp vanilla extract
  • Gel food coloring (blue, purple, pink, black for galaxy swirl)
  • Edible glitter or luster dust (optional, for starry effect)
  • Fresh blackberries (optional)
  • Sparkling sugar crystals

Instructions

  1. Preheat oven to 180°C (350°F). Line 2 baking sheets with parchment paper.
  2. In a bowl, whisk flour, cocoa, baking soda, and salt.
  3. In another bowl, whisk sugar, oil, egg, buttermilk, and vanilla until smooth.
  4. Fold dry ingredients into wet until just combined.
  5. Drop batter by spoonfuls (about 2 tbsp each) onto trays, spacing apart.
  6. Bake 10–12 minutes, until cakes spring back when touched. Cool completely.
  7. Beat butter until creamy. Add powdered sugar, cream, and vanilla.
  8. Divide frosting into 3–4 bowls, tinting each with different galaxy shades (blue, purple, pink, black).
  9. On a sheet of plastic wrap, spoon stripes of each color side by side. Roll up and twist ends to form a log.
  10. Place in piping bag to create a galaxy swirl effect when piped.
  11. Add edible glitter for sparkle.
  12. Pipe cosmic frosting onto the flat side of half the cakes.
  13. Top with remaining cakes to sandwich.
  14. Top with a blackberry and sprinkle with sugar crystals for a starry look.
