Description

Delicious linguine pasta tossed with seared steak, fresh broccoli, and a flavorful cowboy butter sauce.


Ingredients

  • 12 ounces linguine
  • 1 pound sirloin steak, sliced
  • 2 cups broccoli florets
  • 4 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon smoked paprika
  • ½ teaspoon crushed red pepper flakes
  • 1 teaspoon fresh parsley, chopped
  • ½ teaspoon fresh thyme
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup grated Parmesan cheese
  • ½ cup reserved pasta water

Instructions

  1. Cook the pasta – Bring a large pot of salted water to a boil. Add the linguine and cook according to package directions until al dente. During the last two minutes of cooking, add the broccoli florets so they cook quickly but stay bright and tender. Before draining, reserve about half a cup of pasta water.
  2. Sear the steak – While the pasta cooks, heat a large skillet over medium-high heat. Add a small amount of butter and place the sliced steak in the pan. Cook for about 2–3 minutes per side until nicely browned. Remove the steak from the skillet and set it aside so it stays juicy.
  3. Make the cowboy butter sauce – In the same skillet, reduce the heat to medium. Add the remaining butter and let it melt slowly. Stir in the minced garlic, Dijon mustard, lemon juice, smoked paprika, crushed red pepper flakes, thyme, parsley, salt, and black pepper. Let the mixture cook for about a minute until fragrant.
  4. Combine everything – Add the drained linguine and broccoli to the skillet. Toss gently so the pasta becomes coated in the flavorful cowboy butter. If the sauce seems too thick, add a splash of the reserved pasta water until it reaches a silky consistency.
  5. Add the steak – Return the sliced steak to the pan and toss everything together. Sprinkle Parmesan cheese over the top and stir until the cheese melts slightly into the sauce. Serve warm, with extra herbs and Parmesan if you like.
