  • 1 (16 oz / 450 g) can refrigerated biscuit dough (8 large biscuits), cut into quarters
  • 1 ½ cups shredded cheddar cheese (sharp for best flavor)
  • 6 large eggs
  • ½ cup (120 ml) milk
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp black pepper
  • ½ tsp salt (adjust depending on sausage seasoning)
  • 4 tbsp unsalted butter
  • ¼ cup all-purpose flour
  • 3 cups whole milk
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ tsp ground sage (optional, for that Southern flavor)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, cook sausage until browned and crumbly. Drain excess fat.
  3. Spread the biscuit pieces evenly in the bottom of the dish.
  4. Layer cooked sausage on top of biscuits.
  5. Sprinkle half the cheddar cheese over sausage.
  6. In a bowl, whisk together eggs, milk, garlic powder, onion powder, salt, and pepper.
  7. Pour evenly over the biscuit-sausage layer.
  8. In a saucepan, melt butter. Whisk in flour and cook for 1 minute to form a roux.
  9. Gradually whisk in milk until smooth and thickened (5–7 minutes).
  10. Stir in salt, pepper, and sage.
  11. Pour gravy evenly over the casserole mixture.
  12. Top with remaining cheese.
  13. Bake uncovered for 35–40 minutes, until golden brown and set in the middle.
  14. Let cool for 5–10 minutes before slicing.
