Ingredients

- 4 cups chopped green cabbage
- 2 medium carrots, sliced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups low-sodium vegetable broth
- 2 tsp olive oil
- 1 tsp dried thyme
- 2 bay leaves
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onions until translucent (about 5 minutes).
- Add sliced carrots and minced garlic; cook for another 3-4 minutes.
- Stir in chopped cabbage and pour in vegetable broth. Bring to a gentle simmer.
- Season with thyme, bay leaves, salt, and pepper. Simmer uncovered for about 30 minutes until vegetables are tender.
- Taste and adjust seasoning if needed before serving.

- This soup can be stored in the refrigerator for up to 3 days.
