Ingredients

  • 4 cups chopped green cabbage
  • 2 medium carrots, sliced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 2 tsp olive oil
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions until translucent (about 5 minutes).
  2. Add sliced carrots and minced garlic; cook for another 3-4 minutes.
  3. Stir in chopped cabbage and pour in vegetable broth. Bring to a gentle simmer.
  4. Season with thyme, bay leaves, salt, and pepper. Simmer uncovered for about 30 minutes until vegetables are tender.
  5. Taste and adjust seasoning if needed before serving.
